Strawberry Stuffed Ricotta Fennel Pancakes

Mother’s Day is round the corner and I’m excited!Every mother works hard for her family each day and its always sweet to surprise her with breakfast in bed so she can relax and take it easy for a change.Makes us moms feel special and appreciated :).My kids and the hubs have spoilt me crazy on Mother’s Day with their plans almost every year.Its always great to see their excitement for their efforts and fills me with so much gratitude. I look forward to my kids’ sweet cards and poems too!This time around we’re planning to do a 5K Mother’s Day Walk in support of March of Dimes followed by lunch and I’m looking forward to it!

Strawberry stuffed Ricotta fennel pancakes


I’m glad to be partnering with Bonne Maman for a special mother’s day Breakfast in bed recipe using their delicious strawberry preserves that’s perfect for whipping up something magical for us moms. While my mom is miles away from me, I can totally imagine her enjoying her breakfast in bed with these scrumptious stuffed pancakes using Bonne Maman Strawberry Preserves that are perfectly decadent and fluffy with fennel and ricotta.

Bonne Maman preserves are my favorite mainly for the fact that taste like homemade and they’re free from preservatives and artificial flavors.The flavors are fantastic and they’re made with the same time-honored traditional French recipes used to create the brand. They’re perfect for my Stuffed pancakes oozing out and adding their sweet fruity goodness in every bite.

Strawberry Stuffed Ricotta Fennel Pancakes

I came up with the idea of using fennel in this recipe reminiscing my mom’s Indian style pancakes called Pua that uses fennel and banana. They’re out of this world and the fennel works well with the ricotta for this recipe.The process is fairly simple and its just a matter of mixing all the ingredients to make a batter. The egg whites are then folded in carefully that makes these pancakes light and airy.Once its in the pan the strawberry preserve is added and covered with a small amount of batter and cooked to perfection until all fluffy with slightly golden edges.The fennel imparts a lovely sweet aroma and flavor to these pancakes and its what special breakfasts’ are made of!Enjoy and a very happy Mother’s Day to you all!

Strawberry Stuffed Ricotta Fennel Pancakes

Ingredients
  

  • 1 cup ricotta cheese
  • 1 tsp fennel seeds
  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • 1 ½ tablespoons granulated sugar
  • ¼ teaspoon fine salt
  • ¾ cup milk
  • 2 large eggs separated
  • ½ teaspoon vanilla extract
  • Bonne Maman Strawberry preserves
  • Butter

Instructions
 

  • Whisk flour, fennel seeds, baking powder, sugar, and salt in a small bowl.
  • Combine ricotta, milk, egg yolks, and vanilla in a separate mixing bowl.
  • Add the dry ingredients to the ricotta and milk mixture, stirring gently until just combined.
  • Beat the egg whites with a handheld electric mixer until stiff.
  • Stir a tbsp of the egg whites into the pancake batter to lighten the batter, then fold in the remaining whites with a spatula.
  • Heat a griddle over medium-high heat. Melt a small bit of butter in the pan, just enough to coat the surface. Use a 1/4-cup measure to pour batter onto the hot griddle.
  • Spoon a tbsp of the strawberry preserve in the center and pour a small amount of batter just to cover it.
  • Cook the pancakes for about 3 or 4 minutes, until the undersides are golden and you see a few bubbles popping through the pancakes. Flip the pancakes and cook another 2 to 3 minutes, until golden. Repeat with the remaining pancakes.
  • Serve them immediately with powdered sugar, maple syrup and some fresh strawberries.

Avocado Banana Smoothie

Beginning your day with wholesome and nutritious breakfast cannot be stressed enough. But if you’re looking for easy time saving breakfast recipes, then smoothies are the way to go. They give you an instant vitamin boost and can be whipped up in no time. I’ve been making smoothies for my 13yr old (aren’t they always in a rush?) since last year and only recently discovered that avocado does wonders to any smoothie.

The Aha moment arrived last week when I remembered that I had an avocado lying around desperate to be used and decided to throw it into my smoothie.

And boy was it delicious!

Where have I been all this time?

Avocado Banana Smoothie

Avocados are great in smoothies because they add a rich creamy texture not to mention their anti-inflammatory properties, nutrients and minerals. They also fill you up and provide you with the fuel to last through the day. I love adding bananas into my smoothies and this combo (avocado and banana) works perfectly. I use almond milk when making it for myself and semi skimmed milk for my 13yr old, so go with your preference.You can use honey or maple syrup to sweeten it.An easy fun way to ingest something healthy never sounded so good.Enjoy.

Avocado Banana Smoothie

Ingredients
  

  • 1 small Avocado-soft and peeled
  • 1 banana
  • ½ cup yoghurt Greek or any other natural yoghurt
  • 1 cup almond/semi skimmed milk
  • 1-2 tbsp honey or maple syrup

Instructions
 

  • In a blender place all the ingredients and puree until smooth.
  • Pour into glasses and serve.

Easy Tofu Scramble

Crisp morning air feels magical, especially after the recent heat spell the past few weeks. Kids are now settled into their routine and I can finally get back into my own routine after the summer break. I’m back into my kitchen rejuvenated and inspired (this weather does that to me) and the focus will be on healthy recipes since I’ve realized that I might have gained a few extra pounds over the summer break, especially our month-long UK holiday! (blame it on my list of must-eat British foods and its quite a long list 🙂 )

My recipe today involves Tofu and it’s a simple breakfast/brunch recipe that’s absolutely delicious! If you haven’t tried a Tofu Scramble yet, well then, you should. I love Tofu and it’s one of the easiest things to work with. It can take on any flavor and it’s a good source of protein and energy. Its also pretty filling so you won’t be hungry for a while!

My Tofu Scramble uses onions, scallions and peppers (in yellow and orange keeping in mind the warm autumn hues) along with some cilantro for garnish. The peppers are a nice addition here adding their crunch and color and I’ve also added some chili flakes for a hint of heat (that’s purely optional). The dish takes less than 30 mins to prepare and looks beautiful on the table. The flavors are very clean and fresh and it’s a simple dish that looks as good as it tastes. Enjoy.

Easy Tofu Scramble

Ingredients
  

  • Extra Firm Tofu-2 15oz packets
  • small onion-1
  • scallions chopped-1/2 cup
  • chili flakes-1tbsp
  • 1 large yellow pepper
  • 1 large orange pepper
  • cilantro-for garnish
  • salt and pepper
  • oil-2 tbsp

Instructions
 

  • Drain the tofu and place it between two thick towels to squeeze out the liquid.Crumble the tofu with your hands.Keep aside.
  • Chop the peppers and scallions.
  • In a pan heat oil and add the onions and scallions.
  • Saute for a about 2 mins and add the chili flakes.
  • Follow with the peppers and let it cook for another 3-4 mins.Add some salt and pepper.
  • Add the crumbled tofu and let it cook for about 2-3 minutes.Check the seasonings.
  • Add the cilantro.Mix well.
  • Serve hot.

Have I told you how I get obsessed with certain items in my kitchen?There was this time when all I could think of was Sweet Potatoes and then there was the Quinoa phase!My current obsession is with Eggs.I love Eggs and especially fried eggs with a raw runny yolk are a staple breakfast most days of the week.I’m obsessed about cooking my eggs just the right way.Do you have that obsession too?Maybe not.I just cannot trust anybody and have to make them myself.Due to the fact that I eat raw eggs most days of the week,its difficult to trust all the brands out there.So I always go with Safest Choice Eggs that guarantee that the eggs have been pasteurized and are safe to be eaten raw.

Crepes with Strawberry Mascarpone Cream #SundaySupper #Healthy

If you ever stepped into my kitchen on a weekend, you’d find me making these gorgeous Crepes for breakfast for my kids!Its their most favorite breakfast of all time and they really look forward to it on the weekends.And why not!Nothing says it better than a soft delicate Crepe filled with a luscious creamy filling and vibrant Red Strawberries peeking out from the edges!

Crepes are easily available in stores everywhere, but why would you buy something that’s so easy to make at home and I personally prefer the home-made texture better than store bought ones!I just whisk all the ingredients and let it sit in the fridge for a few minutes before the process begins.Growing up I never had a Crepe but instantly fell in love with it in this quaint little French restaurant in London.Since then I’ve been making Crepes, but mostly with a savory Mushroom filling!But that’s for another time 🙂 I started making the sweet fillings after my kids were born, and they’ve always enjoyed it with a LOT of drizzle of Chocolate Sauce 🙂

My filling here is a healthy mix of the creamy Mascarpone and Greek Yoghurt whisked together with some Honey!You can add any fruits of your choice and it tastes absolutely delicious!The perfect breakfast or dessert for any day or night 🙂

Crepes with Strawberry Mascarpone Cream

Ingredients
  

For the Crepe-Makes about 8

  • All Purpose Flour-1 Cup
  • Eggs-2
  • Milk- 1/2 cup
  • Water- 1/2 cup or a bit more
  • Salt-1/4 tsp
  • Sugar-1 tbsp
  • Butter-2 tbsp melted and cooled

For the Filling

  • Mascarpone Cheese-3/4 cup
  • Greek Yoghurt-1/2 Cup
  • Honey-2-3 tbsp
  • Strawberries-3/4 cup sliced

Instructions
 

  • Mix the flour and salt in a bowl.Keep aside.
  • In a mixing bowl mix all the liquid ingredients and add the sugar,flour salt mixture.Whisk until well combined.If you feel the batter is too thick add a little more milk just to get a pourable consistency.
  • Heat some butter or oil in a pan.
  • Pour 1/4 cup of the batter into the pan and tilt the pan in a circular motion so its spreads evenly.
  • Look for small bubbles underneath and a lovely golden color.
  • Flip the Crepe and cook on the other side too.
  • Mix the filling ingredients.
  • Place about 2-3 tbsp of the filing on the inside of a Crepe and roll in any shape you prefer.Drizzle some Chocolate sauce all over!
