Eggplant in Garlic Sauce

My first post in the new year is an all time favorite Eggplant dish that I’m sure you’re going to love. Its an easy side dish to accompany your noodles or fried rice and although it’s very oily I’ve tried to use a little less oil here.:) I’m not very fond of eggplants but this dish really appealed to me when I had it for the first time in a tiny Chinese restaurant in China Town in London. Tender glossy eggplants sautéed with garlic and soy sauce and that hint of sweet and salty in the background was an absolute delight. I’ve been making it ever since and it’s so easy!

This recipe uses Asian Eggplants that are elongated and have a purple skin. You can use any long eggplant for this recipe. They can be cut into thin long strips or diced into smaller pieces like I’ve done here.

I absolutely love garlic and any dish that uses generous amounts of garlic is a sure shot hit in my books. The flavor of the pungent garlic is what’s prominent in this dish. The sauce is a mix of soy sauce, a little rice wine, Chinese black vinegar or balsamic vinegar, some sugar and a little salt. It’s a delightful mix of flavors that spark up this easy and popular stir fried eggplant dish that comes together in less than 30 mins. Enjoy!

A popular Chinese vegetarian dish this Eggplant in Garlic sauce sparks with flavors from garlic,soy and black vinegar that results in a slightly sweet and salty sauce that tastes amazing!

Ingredients
  

  • 2 Asian Eggplants diced
  • 2 large garlic cloves minced
  • 1 tbsp soy sauce
  • 1 tbsp chinese black vinegar or balsamic vinegar
  • 1 tsp rice wine
  • ½ tsp sugar
  • 3 tbsp canola oil
  • ¼ tsp salt

Instructions
 

  • Add the diced eggplants into a pot of water with some salt and let it sit for about 15 mins.Drain and pat them dry.
    In a bowl mix the soy sauce,vinegar,rice wine,sugar and salt
    In a wok heat 2 tbsp of oil. Saute the eggplants on high for a 2-3 mins on one side and flip them over.Cook for another 2-3 minutes on the other side or till they’re slightly golden and tender. Transfer them on to a plate.In the same wok add a tbsp of oil and cook the minced garlic on low heat until they begin to change color making sure to not burn them.Add the eggplants along with the sauce mix.Mix well and cook for another minute.Transfer into a serving bowl immediately.Garnish with spring onions.Serve hot.

With temperatures dropping, we should now be gearing up for winter knocking on our doors.The beauty of these cooler temperatures is that we get to enjoy warm foods either sitting by the fireplace or all wrapped up in our blankets.I really look forward to my Soups,casseroles,curries,warm one pot meals during these cold months.Talking about one pot meals, the recipe I have for you today will blow your mind.Its a Pulao or Pilaf flavored with aromatic spices, using some chicken tenders, Basmati rice and Chicken Stock.And what would I ever do without Chicken Stock.Call me obsessed but I use it in almost anything I cook during Autumn and Winter.The result is a delicious and flavorful meal for the whole family in less than half the time and the effort.A total win win for us busy moms!

Saffron Chicken Pulao,Pilaf

Perdue Signature Chicken StockMy Saffron Chicken Pulao or Pilaf is an easy one pot meal that tastes as if you’ve spent hours in the kitchen but it only requires 30 mins to cook!The flavors from the spices and saffron are unbelievable.Saffron is an essential part of this dish and gives it a lovely golden yellow color and its unique sweetness.The aroma of the dish is similar to cooking a Chicken Biryani and you instantly start feeling hungry!Plus who doesn’t love a chicken and rice dish!The PERDUE® Signature Chicken Stock adds its own richness and gives it that long slow cooked flavor.Its a meal perfect for these colder days when you crave warm comforting foods.I’ve used a combination of whole and some ground spices that are easily available in the stores.You can also add nuts or dried fruits although I’ve kept it fairly simple.I also like to use mint in my rice dishes and I love the sweet flavor it imparts to the dish.

Start by heating 3 tbsp of butter or ghee.Add a bay leaf,1 star anise, 1 cinnamon stick,3 cloves,6 peppercorns and 4 cardamom pods.

Add the sliced onions and saute for a minute.Add a tbsp of crushed ginger and garlic into the pan.Stir and cook for about 2 minutes.Add 1 tsp of garam masala and 1/2 tsp of red chilli powder.

Add the cubed Chicken tenders along with 2 tbsp of yoghurt.Mix all together.Add some salt.

Add 2 cups of basmati rice into the pan and stir to mix.Mix 2 tsp of saffron strands into a cup of warm milk and let it soak for a few minutes.Add the milk mixture into the pan along with 2  1/2 cups of PERDUE® Signature Chicken Stock.Mix well.Throw in some chopped mint.Add salt.

Bring to a boil, reduce the heat, cover and cook for about 20-25 minutes until the liquid is absorbed and the rice is cooked.Serve hot with some boiled eggs and a salad or Cucumber Raita.Enjoy!

Ingredients
  

  • 1 lb Chicken Tenders cut into cubes
  • 2 Cups of Basmati Rice
  • 1 Bay Leaf
  • 4 Cardamom Pods
  • 6 Peppercorns
  • 3 Cloves
  • 1 Star Anise
  • 1 Large Onion
  • 1 tbsp Crushed Ginger
  • 1 tbsp Crushed Garlic
  • 1 tsp Garam Masala
  • 1 tsp Red Chili Powder
  • 2 tsp Saffron Strands
  • 2 tbsp Yoghurt
  • 1 cup milk
  • 2 ½ Cups Perdue Signature Chicken Stock
  • few mint leaves chopped
  • Salt-to taste
  • Butter-3 tbsp

Instructions
 

  • Warm up the milk and add the saffron strands.Let it soak.
  • In a deep pan heat the butter and add the bay leaf,cardamom,cinnamon,cloves and peppercorns.
  • Stir for a minute and add sliced onions and saute for another minute.Add the ginger and garlic followed by garam masala and chili powder.
  • Add the chicken pieces into the pan along with the yoghurt.
  • Add rice into the mix.
  • Add the saffron milk, chicken stock, mint leaves and salt.
  • Bring to a boil on high, cover and lower the heat.
  • Cook for about 20-25 minutes until the rice and chicken are cooked and the liquid has been absorbed.
  • Serve hot with boiled eggs, salad and raita.
  • Enjoy!

Asparagus is one of my favorite vegetables and I love to experiment with it in different ways.This recipe I have for you today combines Asparagus with Potatoes.Typically this dish is made using just potatoes,but teaming it with Asparagus was a brilliant idea and was a hit even with my kids!

Aloo Asparagus

This dish is called ‘Bhujia’ and is a staple in the states of UP and Bihar in India.Its a simple stir fry that requires minimal ingredients and tastes great with some roti/naan along with some dal (lentils) for a simple weekday supper.The potatoes are cooked first and a non stick pan or cast iron skillet would work best since you don’t want them to stick to the pan.They’re cooked until they develop that lovely golden color and the asparagus is added a little later towards the end since they don’t take long to cook.This dish has lovely flavors from the garlic,turmeric and red chili.A family favorite that’s super easy and healthy too!Enjoy!

Ingredients
  

  • Potato-3 medium diced
  • Asparagus-1 bunch
  • Cumin Seeds-1 tsp
  • Crushed Garlic-1 tsp
  • Red chili or paprika-1/2 tsp
  • Turmeric-1/2 tsp
  • Salt-to taste
  • Oil-3 tbsp

Instructions
 

  • Trim the tough ends of the Asparagus and chop them into 1/2 inch pieces and dice the potatoes.Wash and pat dry.
  • In a skillet heat the oil and add the cumin seeds.
  • Once they splutter, add the potatoes along with the turmeric and some salt.Lower the heat to medium and cover.
  • Keep stirring every few minutes until more than halfway cooked and add the asparagus.
  • Add the crushed garlic,red chili/paprika,salt and mix well.
  • Cook for another 6-8 minutes.
  • Enjoy!

Have you ever taken part in a cook off?Well I’ve never done it and I’m so excited to be participating in my first ever cook off thanks to our Sunday Supper group!The theme couldn’t have been better.You guessed it right!Its a Chili cook-off and you will be choosing your favorite chili amongst all the mouth watering entries.I have to tell you that if you’re a Chili lover then look no further because my Chicken Meatball Chipotle Chili is the BEST of the best!Wait till you try it.

Its out of this world and the flavor involves a certain “Chipotle in Adobo Sauce”!Now if you haven’t tried this thing yet, I have to tell you that you’re missing something in your life.I first saw the chefs on Food Network use it and was mesmerised.Its only when I tried it that I realised what an amazing ingredient it is.Its my most favorite pantry item and I just love its smoky flavor.Its just what makes this chili so so special and kicks it up a notch.

To that, add some Chicken meatballs, Kidney beans combined with some cumin and tomatoes and you have one deliciously satisfying meal that’s healthy and super easy too!All you have to do then is to top it up with some sour cream and cilantro before serving to give it that wow factor!The hubs finished a big bowlful no time!You will too.Enjoy.

Chicken Meatball Chipotle Chili

Ingredients
  

For the Meatballs

  • Ground Chicken-1 lb
  • Egg-1
  • 2 Slices of bread-to make fresh crumbs in the food processor
  • Garlic powder-1/2 tsp
  • Salt and pepper

For the Chili

  • Large Red Onion-1 chopped
  • 2 Garlic Cloves-crushed
  • Chipotle in Adobo Sauce-2 chopped
  • Ground Cumin-1 tsp
  • Dried Oregano-2 tsp
  • Kidney Beans-1 15oz can
  • Crushed or diced Tomatoes-1 15 oz can
  • Chicken Stock-1 cup
  • Red Pepper-1 large cubed
  • Salt and Pepper
  • Oil-2-3 tbsp
  • Sour Cream
  • Cilantro

Instructions
 

  • In a food processor place 2 slices of bread and pulse until crumbly.Keep aside.
  • In a mixing bowl mix all the meatball ingredients and make round balls.
  • In a deep pot heat 2 tbsp of oil and shallow fry the meatballs until golden.Transfer onto a tray.
  • In the same pot add a tsp of oil and add the onions.
  • Saute until translucent and add the garlic.
  • Add the Chipotle,ground cumin and oregano.Stir to mix.
  • Saute for half a minute and add the kidney beans.
  • Follow it with the tomatoes and stock.
  • Mix well and add the meatballs.Bring to a boil, reduce the heat and cook for about 10 minutes.
  • Add the red pepper and continue to cook for another 2-3 minutes.Check the seasonings.
  • Turn off the heat.
  • To serve take some chili in a bowl, top it with some sour cream and cilantro.
  • Enjoy!

If you’ve been reading my blog you would very well know by now how much I love roasting my veggies!There’s so much flavor that you can extract out of any vegetable just by roasting them!The best part is they’re super easy and you don’t end up using your pots and pans that prevents the mess around the stove top and makes cleaning a breeze!I serve roasted vegetables as a side dish with my Indian and Non-Indian meals very often and now even my kids have started enjoying them!

Cauliflower is one vegetable that I’ve always loved even as a kid. My kids also love it as much as I do and I make it a point to cook it at least once a week. From heath perspective its something you’d want to make very often since its full of antioxidants and fiber.As a great source of Vitamin K it contains anti-inflammatory properties too.Source

This preparation I have for you today is very simple.All you need is curry powder,salt and chili powder.The fact that I’ve sliced the cauliflower all the way makes for a delightful presentation and its quicker too.I’ve also garnished it with some toasted coconut since it pairs well with curry powder.Simple yet flavorful this is one amazing side dish for any table!

Ingredients
  

  • Medium Cauliflower- sliced into 1/2 inch slices
  • Curry Powder-2 tsp
  • Salt-to taste
  • Red chili or paprika-1/4 tsp
  • Shredded Coconut-1 tbsp
  • Oli-2-3 tbsp

Instructions
 

  • Preheat the oven to 425 degrees.
  • Toast some shredded coconut in a dry pan until slightly golden.Keep aside.
  • Rub the cauliflower with the spices on both sides.
  • Drizze some oil all over.
  • Roast on a greased baking sheet for about 20 mins until all golden.Sprinkle the toasted coconut all over.
  • Serve hot!
