Black Bean and Mango Salad #SundaySupper #Dairy,Egg and Gluten Free

Mangoes are in season and I only just remembered that I haven’t posted any mango recipes of late.Well, the recipe I’ve got for you today is a tasty salad/side dish for this season and has the sweet, salty and tangy element that I’m so fond of in my food.Its great for a crowd and can be assembled in no time.Its a dish that’s also Diary,Egg,Nut and Gluten Free and that’s what we’re focussing on today for our Sunday Supper!’FREE FOR ALL’ foods that are either Fat free,Gluten free,Dairy Free,Egg Free or Nut Free for people who are either intolerant or choose to avoid certain foods.Well, we have over 30 recipes for you today featuring various “free for all’ dishes that will blow you away!

Black Bean and Mango Salad

I’m a big Mango lover and love to use them in both sweet and savory dishes.This salad came about one afternoon,when I was searching my pantry for some lunch ideas and spotted the can of Black Beans forlornly calling my name.It had been sitting there ignored for some time and I really felt sorry for it!

Really, I did.

I immediately took it out and my eyes wandered around the kitchen until I spotted the fruit bowl with fresh juicy Mangoes!Next thing I knew I was peeling off the skin of the mangoes and with a little-bit-of-this and a little-bit-of-that thrown in,my lunch was ready within ten minutes!The Black Beans were bouncing with joy being tossed around with the mango and cilantro and they did seem quite happy 🙂

The toasted crushed cumin and chat masala are the Indian elements in this salad and add a lovely nutty, tangy flavor to it.If you like some heat then add the Jalapeños (I added some in mine!).Either way,its delicious!

Black Bean and Mango Salad #SundaySupper

Ingredients
  

  • 1 10 oz Can of Black Beans
  • Ripe Mangoes-2 peeled and cubed
  • Cumin Seeds-2 tsp
  • Lime Juice-2 tbsp
  • Cilantro-2 tbsp chopped
  • Jalapeño optional-1 chopped
  • Salt-to taste
  • Pepper-1/2 tsp
  • Chat Masala-1/2 tsp

Instructions
 

  • In a pan toast the cumin seeds until aromatic and slightly browned.Once cool,crush them using a pestle and mortar.
  • Drain and rinse the black beans.
  • In a bowl toss all the ingredients and put in the fridge to let the flavors come together.
  • Serve chilled.

Couscous Cakes

Couscous is on the menu today!The tiny jewels of semolina granules coated in wheat flour is packed with fiber, vitamins and minerals.The key to a good couscous lies in the flavor you add to it, since its quite flavorless on its own.It cooks quickly and is the perfect lunch when you’re in a hurry!I’d picked up a packet of Whole Wheat Couscous from Trader Joe’s with the purpose of using it in some way and looked up the web for some inspiration.I came across Giada’s Recipe for Couscous Cakes that sounded unique with an Indian twist and I instantly knew I had to try it!

I made some changes to the original recipe by using parsley instead of coriander and added some dried cranberries and almonds for some tart and crunch that works perfectly.The lemon zest gives a nice fresh flavor to the dish and the star of the dish clearly is the Mango Chutney that has all the delicious spices and ginger and juicy bits of mango that you get every now and then.

The cakes turned out great and I really enjoyed all the flavors together!You can make these cakes ahead and store them in the refrigerator until required.Just shallow fry them at the last minute and serve your guests.A lovely recipe with an Indian touch that’s surely a keeper 🙂

Couscous Cakes

Ingredients
  

  • Whole Wheat Couscous-1 cup
  • Egg-1
  • Egg Yolk-1
  • Mango Chutney-1/3 cup
  • Ground Coriander-1 1/2 tsp
  • Lemon Juice-2 tbsp
  • Lemon Zest-1 tbsp
  • Dried Cranberries-1/4 cup
  • Sliced Almonds-1/4 cup
  • Chopped Parsley-1/2 cup
  • Plain Flour-2 tbsp
  • Salt-to taste
  • Pepper- 1/2 tsp
  • Olive Oil- to shallow fry

Instructions
 

  • Cook couscous according to the instructions.
  • Add all the ingredients except Olive Oil and mix together.
  • Heat a skillet with some Olive oil.
  • Wet your hands with a little water and take a small amount of the mixture.
  • Form round shaped patties and shallow fry them until golden.
  • For easier frying you can also refrigerate the cakes for about 30 mins before frying them.
  • Serve hot!

Mango and Strawberry Cream

Summer months are my favorite since I get to enjoy my favorite fruit, Mango!Yes, I love mangoes and cannot have enough of them all summer long.I use them in my smoothies,salads,salsa,pies and of course the dessert I have for you today.It’s simple with pure flavors just the way I like my desserts in the summer.

Mango and Strawberry Cream
Its just my take on the good old Fruit Cream that I’ve enjoyed since childhood when Mom used heavy cream every time.Although it tasted delicious, I cannot imagine eating it for my dessert today due to the high fat content and the calories in there.But,I’ve made a healthier version of this family classic using mascarpone and greek yoghurt and it tastes delicious.

It can be whipped-up in no time and you can use any fruit on hand.Its an easy chilled dessert that can be made ahead especially when you’re entertaining and also looks super cute.Garnish with a little mint for the finishing touch.Who says healthy cannot be delicious!Enjoy.

Ingredients
  

  • Strawberries-1/2 cup hulled
  • Ripe Mangoes-1/2 cup peeled and chopped
  • Mascarpone Cheese-2/3 cup
  • Greek Yoghurt-1/2 cup
  • Honey-2-3 tbsp
  • Vanilla Extract-1 tsp

Instructions
 

  • Mix the mascarpone, greek yoghurt,honey and vanilla with an electric mixer until smooth and creamy.
  • Arrange the fruits and cream in any order that you prefer,into a serving dish.
  • Garnish with a little mint.
  • Serve chilled.
