Stir Fried Quinoa with Vegetables

I like a light lunch during these hot summer days and Quinoa fits the bill perfectly.I love the fact that it’s healthy and you can dress it up pretty much any way you want.It soaks up the flavors added to it and tastes amazing.I’ve tried Quinoa with sweet and salty flavors and loved it both ways.Today I’ve made a simple stir fry packed with some vegetables for an easy lunch or dinner.The crunch of the veggies and a hint of ginger in the background is all this dish needs to satisfy your tastebuds.

I first tasted Quinoa in a restaurant in a salad with a sweet orange dressing and it tasted absolutely delicious!Since then I’ve been making it with various combinations and each one has come out good like this  Quinoa Aloo Tikki and my Quinoa Chickpea Stew that are easy to prepare and taste amazing!Its a pantry staple and I typically cook a big batch at a time.That way I have it ready and can use it whichever way I want.

The flavors in my stir fry are pretty simple.I start off with browning some onions in oil and add the ginger followed by the veggies before adding the Quinoa.I love adding mint to my rice dishes and have treated this Quinoa dish is a similar fashion by garnishing it with sweet mint. It instantly adds its fresh sweet taste and works nicely with the rest of the ingredients.You could get creative and also add your choice of nuts to this dish if you prefer.Enjoy!

Stir fried Quinoa with Vegetables

Ingredients
  

  • Quinoa-1 1/2 cups
  • Water-3 cups
  • Onion-1 large chopped finely
  • Jalapeño- 1 chopped
  • Crushed Ginger-1 inch
  • 1 cup peeled and diced carrot
  • 1 cup diced green pepper
  • 1 cup chopped Baby Bella Mushrooms
  • Mint for garnish
  • Salt
  • Oil-3 tbsp

Instructions
 

  • Rinse the quinoa and add in into a pot with water with a little salt.
  • Bring to a boil, reduce the heat, cover and cook for about 15 mis or until the water has been absorbed and the quinoa is cooked.
  • In a separate pan heat oil and add chopped onion and sauté until slightly golden.Add the chopped jalapeño.
  • Add crushed ginger and cook for half a minute and then add the mushrooms.
  • Saute until the mushrooms are golden .
  • Add the carrots along with some salt and cook for about 2-3 minutes.
  • Add the peppers and mx well.Once the veggies are cooked add the quinoa.
  • Mix well and check the seasoning.
  • Garnish with chopped mint.

Top 10 Recipes of 2013

Its the start of the New Year and I’m so glad 2013 has ended.It will forever be the most difficult year of my life, having lost my Dad .I still cannot believe that he’s gone and I yearn to hear his voice, his phone calls, his messages and struggle with it everyday.

To add to the pain,my Mom had a health scare just two days before the year ended.Thankfully she’s stable now and recovering.The last few months have been extremely hard for me and made me see life in a totally different way.Events like these make you appreciate the value of life and teach you to enjoy every moment with your near and dear ones because you don’t know what the next moment has in store for you.

While 2013 was extremely difficult for me personally, it was a great year for my blog in terms of growth and I also got to work with some well known brands like Campbells, Bertolli and Gourmet Garden to name a few.I look forward to working with these brands again and add many more to the list in 2014.

In-spite of so much turbulence going on in my life, YOU my dear readers were always here reading my stories and encouraging me with your kind words.Every time you visit my site,comment,read a recipe, you motivate me to keep cooking and sharing my recipes with you.It has helped me immensely and kept me going throughout and I have to thank each and every one of you.

In our day to day routine we are all pressed for time.Especially when it comes to cooking dinner, we’re always looking for shortcuts to make the process easier.I’m no different on weekdays and always look for something easy but nutritious for my family and that’s where one pot meals come in handy.

Indian Quinoa Chickpea Stew

My Indian Quinoa Chickpea Stew has all the things your would need for your dinner simmered together in the same pot eliminating the need for cooking separate dishes saving you all the time and effort to feed your family.Its packed with nutrition from the carrots,the chickpeas and the quinoa and the cumin and coriander provide the flavor base to turn it into a hearty and delicious stew.

Now that we’re entering ‘Fall’ this would be ideal for your weeknights providing a much needed warmth and comfort in the cooler days.You could also add any meat or sausage depending on your preference.I’ve kept it vegetarian/vegan.

Indian Quinoa Chickpea Stew

Ingredients
  

  • Quinoa-3/4 cup
  • Carrots-1 cup
  • Chickpea- 1 14 oz can
  • Onions-1 medium
  • Ginger-1 inch crushed
  • Green Chili or jalapeño -1 seeded and chopped
  • Tomatoes-1 14 oz can or 2 fresh chopped
  • Cumin Seeds-1 tbsp
  • Ground Coriander- 2 tsp
  • Salt -to taste
  • Water-2 cups
  • Oil-2 tbsp

Instructions
 

  • In a pot heat the oil and add cumin seeds until they crackle.
  • Add the chopped onion.Saute on medium heat for about a minute.
  • Add the crushed ginger and the chili.
  • Saute for another minute.
  • Add the ground coriander and stir until fragrant and add the tomatoes.
  • Mix well and the Carrots and Quinoa.
  • Add water and salt and bring to a boil.Check the seasonings.
  • Reduce the heat, cover and continue to cook until Quinoa is all cooked about 15 minutes.
  • Add the Chickpeas and continue to cook for another 5-6 minutes.
  • Add a little more water of too thick.
  • Serve hot!

Curried Quinoa Vegetable Soup

The weather was pretty damp and dull at the beginning of this week and I was craving for something comforting for my lunch.I had made my Quinoa Aloo Tikkis over the weekend and had some cooked leftover Quinoa.I decided to try a curried soup using the Quinoa with some veggies and coconut milk and boy was it delicious!!!One of the best soups I’ve had in a long time and the flavors were just amazing!

Having a batch of cooked Quinoa opens up endless possibilities and that’s why I would recommend cooking a generous amount in one go.It freezes well and stays good in the  refrigerator for about a week.You can use it in your salads,soup,anything really!

curried quinoa 3The addition of ginger is what makes it come alive and the coconut milk and curry spice further enhances the flavors.The Red Pepper and Green Peas add their vibrant colors and sweet taste.Its pretty filling too and you don’t need more than a small bowlful at one time.Bursting with flavors and creamy this is one soup you have to try 🙂

Curried Quinoa Vegetable Soup

Ingredients
  

  • Cooked Quinoa-1 1/2 cup
  • Red Peppers-3/4 cup chopped
  • Peas-1/2 cup
  • Onion chopped-1 small
  • Ginger- 1 inch crushed or grated
  • Whole Mustard-1/2 tsp
  • Jalapeño-1 chopped
  • Curry Powder-1 tsp
  • Full Fat Coconut Milk-1 cup
  • Water-1/2 cup
  • Salt-to taste
  • Coconut Oil-2 tbsp

Instructions
 

  • Cook Quinoa according to instructions.
  • In a pot heat oil and add the mustard until it crackles.
  • Add onions followed by ginger and jalapeño.Saute for about 2 minutes.
  • Add the curry powder and salt.Saute for about a minute until fragrant.
  • Add the red peppers and the cooked quinoa.Stir and mix.
  • Add the coconut milk, water,peas and mix well.Let it simmer for about 2-3 minutes.
  • Check seasonings and serve hot!
