Paneer Tikka Potato Poutine Bites

It’s National Sunday Supper Day!! I have been with this wonderful group for the past 4 years since joining in May 2012 and it has been an amazing journey!Sunday Supper is committed in their mission to bring back Sunday Supper around the family table in every home. You can also take the Sunday Supper pledge by clicking on this link. Our founder Isabel is a very inspiring woman with the way she has led and continues to lead our group. It has been a pleasure to share over 70 recipes for our Sunday Supper and I’m looking forward to many many more!!This day is even more special since we’re partnering with Idaho® potatoes in creating some delectable Poutine-Inspired recipes to celebrate our four-year anniversary!!Wait till you see the line-up we have for you!

Paneer Tikka Potato Poutine Bites

You know that I love potatoes! My recipes using potatoes are far too many to share here but I particularly loved using Idaho® potatoes in my Indian Spiced Potato Pastry Shells and they’re always popular with our guests. Idaho® potatoes’ Russet Potatoes are my favorite and I use them in most of my potato recipes.Idaho® potatoes have a unique taste and texture due to ample mountain-fed irrigation and rich Volcanic soil. Look for the “Grown In Idaho” seal to get top quality Idaho® potatoes in  your grocery stores.

Spicy Roasted Potatoes

I loved this Poutine Challenge thrown at us by Idaho® potatoes and decided to give my own Indian-Inspired spin on Poutine. Poutine is classic French Canadian dish of fries, cheese curds and gravy that I first tasted in Montreal. It was to die for! It has now gone global with chefs creating their own versions in different parts of the world! For today’s recipe I’ve come up with a savory spicy paneer tikka served over some garlicky roasted Potatoes that have been sliced and coated in warm aromatic spices like cumin and garam masala. I’ve made an Indian masala sauce to drizzle over these beauties and I have to tell you that they’re absolutely phenomenal!

Paneer Tikka Potato Poutine Bites 1

Paneer is an Indian cheese that’s easily available these days at your local grocers or if you’re lucky to have Indian grocers nearby. You can also make it at home following this recipe. The paneer is cubed and marinated in yoghurt and some spices for a few hours to soak the deliciousness and then grilled until nice and golden. The potatoes are coated in a spice mix and roasted in a preheated oven and deliciously crispy. Indian masala sauce consisting of onions, tomato, spices and cream is drizzled over the assembled poutine bites and the robust flavors tease your palate like none other. The contrasting flavors from the smoky paneer tikka on top of the crispy spicy potatoes smothered in a slightly sweet and rich creamy sauce is pure joy! Enjoy!

Indian Spiced Roast Salmon 4

We love Salmon and I’m constantly experimenting with different ways to cook it.This recipe came about as a result of being time-constrained (aren’t we all!) and in-between kids’ activities and we loved it!The Salmon is perfectly coated in all those delicious spices and it comes on the table in no time!I’ve served this as an appetizer too using cubed fish instead of the long fillets. Its always a hit with my guests and super simple to make.Enjoy!

Aloo Matar (Potatoes and Peas) #Vegan

03 | 12 | 2014
By Soni Sinha

Aloo Matar

The mix of the damp and cold weather inspired me to make this dish.I love dry stir fried veggies with parathas or puri during this kind of weather. Its a cozy weeknight meal that just screams comfort.I love the crusty layer that the potatoes develop during the cooking process and the peas add their wonderful vibrant color. Its a simple dish that comes together quickly and is a favorite of my kids too!

Aloo Matar

This is a dry version of Aloo Matar that is a tad different from the usual.I boil the potatoes first and then fry them in some aromatic spices like cumin, coriander, turmeric ,chili and amchur (dry mango powder).Amchur is is basically powdered green mango and adds this wonderful citrusy tangy flavor to the dish. Its easily available at your local Indian grocers.Enjoy!

Spicy Mac and Cheese Patties with Curried Mayonnaise for #KraftyCooking

08 | 01 | 2014
By Soni Sinha

This post is part of a case study for “Google Plus for Brand Awareness”.All opinions are my own.

I’m excited to participate in this case study involving some well known faces on Google Plus who came up with this concept. The idea is to show brands how they can have a wider appeal by using Google plus to promote their products. For this purpose, we were asked to come up with a recipe using Kraft ‘Mac and Cheese’ or ‘Cracker Barrel Cheese’.I had a pack of Kraft Mac and Cheese and decided to go ahead and do something with it.

Spicy Mac and Cheese Patties

If you’ve been reading my blog you know how much I love appetizers. And this time was no different. My mind went straight to create an appetizer but a spicy hot version.I used Jalapeños and some Cayenne for that kick and I have to tell you that this is not for the faint hearted. Its spicy, its hot and its addictive.

Kraft Mac and Cheese

The patties are crispy on the outside and moist on the inside.Since they’re not particularly low cal I’ve made them smaller for portion control.I serve them on a bed of lettuce with some curried mayonnaise that balances the heat and also adds a smooth sweet element to the appetizer. The combo tastes delicious and comes together pretty quickly.Serve it for your game night and see it disappear in no time!

Curried Mayonnaise

  • Mayonnaise-3/4 cup
  • Curry Powder-1 tbsp
  • Honey-2 tbsp
  • Salt-to taste
  • Pepper-1/4 tsp

Masala Shrimp

07 | 09 | 2013
By Soni Sinha

Cooler air this week has got me thinking, are we braced for an early winter this year?I have to admit that I’m not a winter person.I mean I don’t mind the occasional snow that accumulates just enough for the kids to make their own snowman and snow angels and melt off the next day, while its still pristine white.I dislike the snow that lasts for days turning into ice ready to break people’s backs. Its just not fun.Not to mention the mess it makes.

Masala Shrimp 1

But hang on,why am I talking about winter yet?We haven’t even witnessed ‘Fall’ and don’t know what that has in store for us.Last year ‘Sandy’ just destroyed it all and I sincerely hope and pray that major hurricanes steer clear of our shores!Inspite of all this I still love ‘Fall’.I just love the warm colors of the leaves, the cool breeze, the pumpkins, the excitement of my kids to dress up for Halloween, the apples, the stews, warm comforting dishes hot from the oven and talking about hot my Masala Shrimp just fits the bill perfectly.

Masala Shrimp

Spicy and full of flavor this dish is my perfect companion for these cool days and since we’re using Shrimp here they don’t take too long to cook! The heat comes from the green chilies, the red chili powder and the garam masala. The spices give it tons of flavor and you can serve it with rice or naan bread to scoop up all those lovely juices! Its one of those special dishes you make when you’re craving something really spicy.
