Strawberry Stuffed Ricotta Fennel Pancakes

Mother’s Day is round the corner and I’m excited!Every mother works hard for her family each day and its always sweet to surprise her with breakfast in bed so she can relax and take it easy for a change.Makes us moms feel special and appreciated :).My kids and the hubs have spoilt me crazy on Mother’s Day with their plans almost every year.Its always great to see their excitement for their efforts and fills me with so much gratitude. I look forward to my kids’ sweet cards and poems too!This time around we’re planning to do a 5K Mother’s Day Walk in support of March of Dimes followed by lunch and I’m looking forward to it!

Strawberry stuffed Ricotta fennel pancakes


I’m glad to be partnering with Bonne Maman for a special mother’s day Breakfast in bed recipe using their delicious strawberry preserves that’s perfect for whipping up something magical for us moms. While my mom is miles away from me, I can totally imagine her enjoying her breakfast in bed with these scrumptious stuffed pancakes using Bonne Maman Strawberry Preserves that are perfectly decadent and fluffy with fennel and ricotta.

Bonne Maman preserves are my favorite mainly for the fact that taste like homemade and they’re free from preservatives and artificial flavors.The flavors are fantastic and they’re made with the same time-honored traditional French recipes used to create the brand. They’re perfect for my Stuffed pancakes oozing out and adding their sweet fruity goodness in every bite.

Strawberry Stuffed Ricotta Fennel Pancakes

I came up with the idea of using fennel in this recipe reminiscing my mom’s Indian style pancakes called Pua that uses fennel and banana. They’re out of this world and the fennel works well with the ricotta for this recipe.The process is fairly simple and its just a matter of mixing all the ingredients to make a batter. The egg whites are then folded in carefully that makes these pancakes light and airy.Once its in the pan the strawberry preserve is added and covered with a small amount of batter and cooked to perfection until all fluffy with slightly golden edges.The fennel imparts a lovely sweet aroma and flavor to these pancakes and its what special breakfasts’ are made of!Enjoy and a very happy Mother’s Day to you all!

Strawberry Stuffed Ricotta Fennel Pancakes

Ingredients
  

  • 1 cup ricotta cheese
  • 1 tsp fennel seeds
  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • 1 ½ tablespoons granulated sugar
  • ¼ teaspoon fine salt
  • ¾ cup milk
  • 2 large eggs separated
  • ½ teaspoon vanilla extract
  • Bonne Maman Strawberry preserves
  • Butter

Instructions
 

  • Whisk flour, fennel seeds, baking powder, sugar, and salt in a small bowl.
  • Combine ricotta, milk, egg yolks, and vanilla in a separate mixing bowl.
  • Add the dry ingredients to the ricotta and milk mixture, stirring gently until just combined.
  • Beat the egg whites with a handheld electric mixer until stiff.
  • Stir a tbsp of the egg whites into the pancake batter to lighten the batter, then fold in the remaining whites with a spatula.
  • Heat a griddle over medium-high heat. Melt a small bit of butter in the pan, just enough to coat the surface. Use a 1/4-cup measure to pour batter onto the hot griddle.
  • Spoon a tbsp of the strawberry preserve in the center and pour a small amount of batter just to cover it.
  • Cook the pancakes for about 3 or 4 minutes, until the undersides are golden and you see a few bubbles popping through the pancakes. Flip the pancakes and cook another 2 to 3 minutes, until golden. Repeat with the remaining pancakes.
  • Serve them immediately with powdered sugar, maple syrup and some fresh strawberries.

Balsamic Strawberry Walnut Pizza with Fresh Mozzarella and Basil #SundaySupper #FlStrawberry

Strawberries are great any time of the year and are my favorite fruit. I can’t get enough of the deliciously sweet strawberries that are available all summer long. The vibrant red color can light up any gloomy day and every bite of the ripe juicy strawberries satiates like none other. Come winter and although you may still find strawberries in the stores, they’re not the same. Solution? Florida Strawberries that are available December through April and are every bit the plump, red, ripe, juicy strawberries that you find in the summer! Today is Valentine’s Day and what better way to celebrate than with some mouth-watering Strawberry recipes that you can make for your loved ones. I’m excited to be partnering with Florida Strawberries, for our Valentine’s Day event!

Strawberries

While we might tend to go overboard with our treats for Valentine’s Day, it’s always a good idea to plan a healthy yet indulgent menu so as to not regret it later! Keeping this is in mind our event is showcasing ‘Healthy and Nutritious Valentine’s Day recipes’ that you can enjoy without guilt. Did you know that just eight medium strawberries contain more Vitamin C than one orange? They’re also packed with fiber and anti-oxidants. Enjoy them while you can!

Balsamic Strawberry Walnut Pizza with Fresh Mozzarella and Basil

My Balsamic Strawberry Walnut Pizza has some amazing flavors going on with the fresh mozzarella and basil but the star of the show have to be the balsamic strawberries. The strawberries are cooked in a sweet balsamic reduction to soak the delicious flavors before being added on to the pizza. I’m crazy about strawberries with Balsamic vinegar. It adds another dimension to the flavors. I’ve used regular store-bought whole wheat pizza dough that also makes this a fiber filled meal. The walnuts add some crunch and every bite of the pizza is alluring with the lovely sweet and tart combination working beautifully. It’s an elegant meal that’s sure to satisfy your taste buds and also looks pretty on the table. Enjoy!

Balsamic Strawberry Walnut Pizza with Fresh Mozzarella and Basil

Ingredients
  

  • 1 ball Whole wheat Pizza dough
  • 10-12 thinly sliced fresh mozzarella cheese
  • fresh basil leaves
  • 1 cup fresh strawberries sliced
  • ¼ cup walnuts

Balsamic Strawberry Reduction:

  • ¼ cup balsamic vinegar
  • 2 tbsp brown sugar
  • 1 cup fresh strawberries diced

Instructions
 

  • Preheat the oven to 375 degrees.
  • In a small pot mix the balsamic vinegar and brown sugar. Bring to a boil, reduce and let it cook for about 10 minutes. Add the strawberries and let it cook for about 5-6 minutes.
  • In a pan dry roast the walnuts until fragrant.
  • Lightly flour your surface and roll your pizza dough into a 10-12 inch circle. Cover your sheet pan with parchment paper and transfer the rolled dough onto the parchment paper.
  • Drizzle some balsamic reduction over the dough. Follow with the fresh mozzarella and walnuts all over.
  • Arrange the strawberries all over and bake in the oven for 30-35 minutes.
  • Once it’s done scatter fresh basil all over and drizzle some of the balsamic sauce.

Holidays are the time to indulge in delectable desserts like the one I have for you today.

If you’re looking for an easy dessert that would undoubtedly be the star of the evening, then this one is for you.

If you’re looking for last minute dessert ideas, then this for is for you.

If you’re looking for a dessert that can be made a day ahead so as to save you time and effort on the day itself, then this one is for you.

If you love cake and custard and cream, then this one is for you.

If you’re looking for a kid pleasing dessert, then this one is for you.

Individual Strawberry Trifle

Trifle is my all time favorite dessert and I love making it during the holidays.The layers of cake,custard and cream is magical and the rave reviews you get for a dessert as easy as this makes it all the more worthwhile.I love strawberries in my trifle but you could use any fruit that works for you.I’ve made these in individual portions but you could use a big trifle dish too.I just find the individual portions cute during the holidays.

You could make the cake from scratch but I’ve used a regular store-bought pound cake and pudding mix.Makes the process even quicker.The beauty of layered desserts is that you can involve your kids and its a fun way to get them into the kitchen during the holidays!My kids layered this one for me 🙂 This is one dessert that’s going to disappear quickly so be sure to make some extra servings.

Ingredients
  

  • 1 package vanilla instant pudding
  • 1 package pound cake cut into cubes
  • 1 package fresh strawberries halved
  • 1 container frozen whipped topping thawed

Instructions
 

  • Prepare pudding according to directions on package.
  • Let pudding stand a few minutes to set.
  • In your mini dishes, layer some of the cake pieces,top with some strawberries,then some the pudding,more strawberries,some of the whipped topping and repeat.
  • Repeat layers with the remaining ingredients.
  • Cover and store in the the refrigerator for at least 2 hours before serving.

Come Summer and we start craving for foods that cool us off and provide much needed relief from the heat!Fresh fruits,salads,ice-creams,cool desserts are always welcome!Recently, I received some delicious Walnuts from California Walnuts that I have been enjoying for my snack!Our Sunday Supper featuring ‘Summer Berries’ seemed like the perfect opportunity to use them since my Mini Strawberry Cheesecakes have a Walnut Crust!Sounds great, doesn’t it?

Wait till you taste it!Its out of this world delicious and just the perfect little bite for a sweet treat at any time!These couldn’t be easier and did you know they’re also secretly healthy?You’re very welcome. 🙂 The process starts in the food processor when the walnuts are crushed to resemble crumbs and the butter and sugar are added into the mix.I love the Walnuts in the crust and they impart a rich deep flavor to it.The filling consists of Reduced Fat Cream Cheese and Greek Yoghurt that make these treats even more enjoyable without feeling guilty.The sweet juicy Strawberries just complete the look and give them a fresh sweet taste that makes you crave for more and more.A cute dessert perfect for these hot summer days!

Mini Strawberry Cheesecakes with Walnut Crust

Ingredients
  

For the Crust

  • Ground Walnuts-1 1/2 cups
  • Melted Butter-4 tbsp
  • Sugar or honey-2-3 tbsp

For the Filling

  • Reduced Fat Cream Cheese-8 oz room temperature
  • Egg-1 room temperature
  • Greek Yoghurt-2 tbsp
  • Vanilla Extract-1 tsp
  • Sugar-1/4 cup

For the Topping

  • Fresh Sliced Strawberries

Instructions
 

  • Preheat the oven to 350 degrees.
  • In a food processor place the Walnuts and pulse them until a crumb consistency.
  • Add the butter and sugar and pulse again.
  • Line a mini muffin pan with muffin liners.
  • Evenly divide the mixture among the liners and press with your fingers all over.
  • In a bowl using your electric mixer beat the softened cream cheese and egg until creamy.
  • Gradually add the sugar and beat until smooth.
  • Add the Greek Yoghurt and vanilla and beat until combined.
  • Pour a tbsp or two on prepared muffin cups.
  • Bake until the cheesecakes are puffed and set in the center about 17-20 mins.
  • Transfer the pan to a wire rack and let it cool in the pan and then transfer into a tray and cool completely.
  • Refrigerate for a few hours or overnight.Garnish with sliced strawberries and serve.
