Thai Spiced Chicken Meatballs with Peanut Sauce 1

Summer is the time to be outdoors!Glorious days with gleaming sunshine, the perfect excuse to go for a hike, a trip to the beach or a picnic.Add some good food and wine to the mix and its a party!Talking of picnics and July being the ‘National picnic month’ we’re partnering with Gallo Family Vineyards in pairing some delectable picnic recipes with their amazing selection of wines that also come in mini bottles!

I adore picnics. Especially in this day and age when digital screens have sabotaged our lives, it’s a great way to enjoy outdoors and appreciate nature in all its glory. We’re blessed to have some lovely picnic areas in our vicinity. Our favorite though is our community park that has a beautiful picnic area overlooking the lake with ample amount of picnic tables and bbq pits. Kids look forward to playing their favorite games while packing their favorite sports equipment and I’m totally focused on the food to pack. We’re big on flavor and spice over here and I love a nice mix of vegetarian/meat appetizers along with cold salads, sandwiches, fruits, dessert and drinks for our picnic. We typically go as a group with our friends and divide the menu. Nothing like a beautiful day spent in the sun sipping your favorite drink, enjoying the food, fun, games and laughter with friends.

When it comes to the drinks menu, wine ranks high on my list!I’ve enjoyed Gallo Family Vineyards’ Cabernet Sauvignon and Pinot Grigio for years but when they sent me these cute little mini bottles of Pink Moscato I was thrilled!How convenient!Its the perfect little size to carry to any outdoor event and I’m sure the wine lovers are with me on this one!I had an option to choose from their selection of Cabernet Sauvignon, Chardonnay, Merlot, Moscato, Pinot Grigio, Pink Moscato, Pinot Noir, Red Moscato or White Zinfandel and I chose the fruity Pink Moscato since it pairs well with Spicy food.

Peanut/Satay Sauce

Thai food is in high demand in my family and it’s served on our table almost every week.Like these Thai Chicken Lettuce Wraps or my Thai Red Curry Chicken!For our event I decided to make these amazing Thai Spiced Chicken Meatballs that my kids love with a luscious Peanut Sauce!The meatballs have the earthy flavors from the lemongrass, galangal and spices like cumin and coriander in the red curry paste.My kids even help me shape the meatballs.So much fun!The meatballs taste delicious and its always a great way to get kids to enjoy different flavors.The smooth peanut sauce rich with peanut butter and coconut milk has a subtle hint of the spices from the red curry paste and just the right amount of sweetness .The meatballs dunked in the sauce is a harmonious blend of flavors in your mouth with the spicy, sweet and sour all coming together.

Gallo Family Vineyards’ Pink Moscato or the White Zinfandel would complement these meatballs beautifully.The Pink Moscato has lovely aroma of citrus and peach with hints of fresh red berries and orange blossoms on the palate.Its refreshing on these hot summer days and has a remarkable balance overall.Sweet and fruity with a light pink color, it’s the perfect light bodied drink with your lunch and pairs well with spicy foods or even desserts!Enjoy!

Ingredients
  

For the meatballs

  • Ground Chicken-1 lb
  • 1 ½ tbsp red curry paste
  • Cilantro-2-3 tbsp chopped
  • Bread Crumbs-1/2 cup
  • Salt-to taste
  • Oil

Peanut sauce

  • 1 can unsweetened coconut milk
  • 1-2 tbsp red curry paste
  • ¾ cup peanut butter
  • ½ cup of sugar
  • salt to taste
  • ¼ cup water

Instructions
 

  • Preheat the oven to 400 degrees.
  • In a mixing bowl mix the meatball ingredients and form into round balls.
  • Place the meatballs on a foil lined baking sheet and bake for 15 minutes or until all cooked and slightly golden.

Peanut sauce

  • In a pot place all the ingredients and bring to a gentle boil whisking continuously.Let it simmer for 3-5 minutes.Allow to cool before emptying in a jar or a box.

Spaghetti with Chicken Meatballs

Summer holidays are coming to an end and I’m already fretting over my daughter starting Middle School in September.I’ve heard parents moan about all the work the kids come home with and hope that its a smooth transition for her.While she starts Middle School, my son will start his First Grade and is very excited  about it!He’s already counting the days and cannot wait to go full-time like BIG KIDS.That also means that starting September, I need to pack lunches for both my kids and I’m constantly looking for ideas.You are too? Well then, we’ve got over 40 recipe ideas for you that I’m pretty sure will come in very handy while planning out your weekly lunches in our back-to-school Sunday Supper.

Spaghetti with Chicken Meatballs

 

When it comes to my kids’ favorites, there are certain foods that never fail like Spaghetti with meatballs.Since we don’t eat Beef, I always make meatballs using Chicken and it turns out great every single time.Plus there’s nothing like an authentic homemade sauce with carrots and celery that add so much flavor.I have to credit my sister’s mother-in-law for the recipe.She hails from Italy and cooks some of the best Italian dishes I’ve ever eaten.

My Chicken meatballs are absolutely delicious bursting with flavors from the garlic, oregano and parmesan cheese.Instead of breadcrumbs,I soak a slice or two of bread in water, squeeze out the excess and add them into the chicken mixture.The moisture keeps the meatballs moist and juicy.You can make the meatballs and the sauce in advance.The sauce lasts for a week in the fridge.Just heat the sauce and the meatballs in the morning,add the spaghetti and you have one amazing lunch option that’s healthy and delicious!My kids love it and so will yours!

Ingredients
  

  • Spaghetti-1 lb

Sauce

  • 1 Large Onion-chopped
  • 3 Garlic cloves- finely chopped or crushed
  • Carrots peeled and chopped-1/2 cup
  • 2 Celery stalks-chopped
  • Can of crushed tomato-13 oz
  • Oregano-1 tsp
  • salt and pepper
  • Extra Virgin Olive Oil-3 tbsp

Chicken Meatballs-makes about 12-14

  • Ground Chicken-1 lb
  • 1 tbsp grated onion
  • 2 Garlic Cloves-crushed or grated
  • 1 Egg
  • 2 slices bread soaked in water
  • Oregano-1 tsp
  • Parmesan cheese-1/2 cup
  • Salt
  • chopped parsley

Instructions
 

  • Boil spaghetti according to the instructions.Reserve about 1/4 cup of the liquid and drain the rest.

Sauce

  • In a pot heat the olive oil and add the onions.
  • Saute for a minute or two and add garlic.
  • Saute for a minute and add the carrots and celery with some salt and pepper.
  • Add the crushed tomatoes.Add the oregano,salt,pepper and mix.
  • Bring to a boil, cover and cook on low for about 15 minutes until all incorporated.Add the reserved liquid to the sauce to thicken.
  • Your marinara sauce is ready.

Chicken Meatballs

  • Squeeze excess water from the bread and add them into a deep mixing bowl.
  • Add the rest of the ingredients and mix well.
  • Form into balls and shallow fry them in a little oil until slightly golden.
  • Add the balls into the sauceand cook for 10-15 minutes.Pour the sauce over the spaghetti.Sprinkle some fresh parmesan all over.
  • Enjoy.

Rigatoni with Pumpkin Ricotta Sauce ~ All things Orange #SundaySupper

Autumn colors are indeed magical.Nature seems like a canvas painted with beautiful warm colors.Pumpkin patches, halloween, trick-or-treating all the fun and the excitement has begun! Autumn also brings along with it some glorious orange colored foods from pumpkins to squash to sweet potatoes and its no surprise then that our friend Pam chose ‘All things Orange’ for today’s SundaySupper!

My entry for this event is an easy Rigatoni with Pumpkin Ricotta Sauce that captures the essence of fall colors and flavors into a gorgeous creamy pasta dish.I found a Martha Stewart recipe and tweaked it by going for the Ricotta instead of heavy cream and adding nutmeg!The result is an elegant pasta dish that takes no effort to prepare and yet makes a strong statement in terms of flavors and texture.

The sage adds this sweet lemony touch and fragrance to the dish and the pumpkin with the ricotta is pure magic.The nutmeg is essential in enhancing the creamy flavors and the grated parmesan is all you need to finish off this gorgeous sauce.I was so happy to see my kids enjoy the dinner as much as we did :).They were very excited to know that there was pumpkin in the sauce. Something about Pumpkins and Halloween that gets them all excited 🙂

Rigatoni with Pumpkin Ricotta Sauce ~ All things Orange #SundaySupper

Ingredients
  

  • Rigatoni-3 cups uncooked
  • Pumpkin Puree-3/4 cup I used canned
  • Ricotta Cheese-1/2 cup
  • Milk-1/4 cup
  • Grated Nutmeg-1 tsp
  • Sage leaves-10 cut into strips
  • Extra Virgin Olive Oil-1 tbsp
  • Grated Parmesan Cheese-1/4 cup
  • Salt-to taste
  • Pepper-1 tsp

Instructions
 

  • Cook the Rigatoni in a pot of salted boiling water until al dente.
  • In a bowl mix together the pumpkin puree, ricotta,milk, sage leaves.
  • In a pan on medium heat, add the Olive Oil followed by the pumpkin sauce.
  • Gently mix together until all creamy.You can add more milk to reach the desired consistency.Add the nutmeg, salt and pepper.
  • Add the cooked pasta into the sauce and add freshly grated parmesan cheese to finish off.Serve hot!

Easy Chocolate Chilli Fudge~5 Ingredients or Less #SundaySupper

You look to create complex dishes all the time, but sometimes its the simplest of things that surprise you!Simple pleasures that require no extra effort and yet bring you this immense joy.Joy in the form of a chocolatey delight that only takes 5 ingredients to make!Its soft, moist, chewy and decadent!This week our #SundaySupper group is contributing recipes featuring Dishes with 5 Ingredients or Less hosted by the lovely Amber Poole!

For somebody who’s not much of a baker, this is my ideal kind of dessert, since it requires no baking and tastes delicious!This fudge is the easiest treat you could ask for with no effort and it comes out perfect every single time.Its a perfect treat for those night time cravings that creep-up after you had your dinner and the kids are tucked in bed!A perfect little bite of soft indulgence that melts in your mouth.

Once the mixture is in the baking pan, you should leave it for at least 2 hours, but my kids were not patient enough and forced me to take it out earlier.As a result they don’t look perfect, but believe me if you leave it for the stipulated time, it will set properly and come out better looking 🙂 The chilli in this fudge gives just the right amount of heat in the background without disturbing the balance of flavors.Easy, rich, foolproof chocolatey treat for your sweet cravings~

Easy Chocolate Chilli Fudge

Ingredients
  

  • Semi Sweet Chocolate chips-12 oz packet
  • Sweetened Condensed Milk-14 oz can
  • Chilli Powder-1 tsp
  • Vanilla Extract-1 tsp
  • Butter-2 tbsp

Instructions
 

  • Line an 8 inch baking pan with parchment paper.In a saucepan on low heat mix all the ingredients and cook until well combined and smooth.
  • Pour into the prepared baking pan. Refrigerate for about 2 hours or until firm.Turn it upside down on a plate and peel off the parchment paper. Cut into squares and enjoy!

Curried Apple and Leek Soup ~ Autumn Apple Party #SundaySupper

Come autumn and the crisp cool air just feels so good in the mornings.I’m enjoying this transition of the weather and the lovely warm and comforting foods that come along with it!Talking about autumn, its also the season of Apples!.This lovely fruit is one of my most favorite things to cook/bake with and I can think of so many ways to use them in my sweet and savory creations.So when my friend Cindy from Cindy’s Recipes and Writings suggested ‘Autumn Apple Party’ as the title for this #SundaySupper I jumped with excitement 🙂

I’m bringing a savory item for this event and its already becoming a family favorite, going by the verdict of my 4 and 9 year olds :)Its my creamy Curried Apple and Leek Soup that has so many varied flavors that tickle your tastebuds in just the right way.I found the original recipe at All Recipes and added my own twist with the bacon and paprika! The soup is slightly acidic from the Granny Smith Apples,with a slight hint and heat of the spices combined with the creaminess of the potatoes. The flavors further elevate with the garnish of the salty, crisp bacon!One bowl full of goodness for this Fall~

Curried Apple and Leek Soup

Ingredients
  

  • Granny Smith Apples-2 peeled cored and chopped
  • Leeks-2 stalks cleaned and chopped
  • Potato-1 medium peeled and chopped
  • Curry Powder-2 tsp
  • Paprika-1 tsp
  • Salt-to taste
  • Pepper-2 tsp
  • Water-2 cups
  • Bacon-2 slices
  • Butter-2 tbsp

Instructions
 

  • Heat butter in a sauce pan and add the chopped leeks.Saute for about a minute until translucent.Add the curry powder and saute for another minute.Add the potatoes,apples,all the other spices and water.Bring to a boil.Reduce the heat, cover and cook for 15 minutes.Adjust the seasonings.
  • Crisp up the bacon in a pan and break it by hand.
  • Once cooked blend the soup until all smooth and creamy.Garnish with the bacon bits and serve hot with crusty bread!
