Pumpkin Pie Truffles

Truffles are one of my all time favorite desserts.Bite-sized perfect little decadent bites in a myriad of luscious flavors.They’re also great as home-made gifts for the holiday season.I love bite-sized desserts because they’re just enough-to tantalize your taste buds,to be passed around with ease, to make a mark.pumpkin-pie-truffles-5And, you can never get enough of them, so make a big batch!ALWAYS!
This Thanksgiving make these dainty little Pumpkin Pie Truffles that capture the flavors of the season and are a breeze to put together. I absolutely love them and they’ve been a big hit with the crowd, young and old.If you’re a pumpkin dessert lover then this dessert will blow you away.The flavor, the aroma, the rich filling, the decadent chocolate coating, its truly a dessert for special occasions.

All it requires,is mixing all the ingredients and some chill time in the fridge for it to set.The filling is super easy and it’s a great make ahead dessert that actually tastes better a couple of days later since the flavors get a chance to amalgamate.You can garnish these beauties with some cinnamon sugar or a drizzle of melted semi-sweet or dark chocolate.I’ve kept it simple here (tried to get the swirl effect with my fingers). A sinfully delicious Fall Dessert.Enjoy!

Pumpkin Pie Truffles-makes around 35 truffles

Ingredients
  

  • 2 ounces full-fat cream cheese softened to room temperature.
  • 2 Tablespoons confectioners' sugar.
  • ⅓ cup pumpkin puree.
  • 1 and 3/4 cups digestive biscuits Goya or McVites or graham cracker crumbs
  • 1 teaspoon pumpkin pie spice.
  • 1 teaspoon ground cinnamon
  • 1 tsp vanilla
  • 4 ounces white chocolate coarsely chopped and melted

Coating

  • 12 ounces White Chocolate coarsely chopped

Instructions
 

  • In a mixing bowl beat cream cheese and confectioners sugar using the paddle attachment of your stand mixer or hand mixer until smooth.
  • Add the pumpkin and mix well.Follow with the biscuits,pumpkin pie spice,cinnamon,and vanilla.
  • Melt 4 ounces of white chocolate in a double boiler on the stove top and add into the mixture and mix until all combined.
  • Place the mixture in the refrigerator for a couple of hours.
  • After 2 hours grease your hands with a little melted butter and start rolling the mixture into even sized balls.Once done place it back in the fridge for an hour.
  • Melt 12 ounces of white chocolate in a double boiler until smooth.Let it cool for about 5 minutes.
  • Place a large parchment paper on a baking tray.Roll the balls into the melted chocolate and arrange on the parchment paper.
  • Carefully lift the tray and place in the fridge to set for a few hours for the truffles to completely set.

Olive Oil Cake

Life is all about enjoying simple pleasures.

Like this simple cake..

I started making this cake as I was craving for something sweet.But little did I expect that my kids would be raving and going for seconds since it’s a tad different from the cakes that they’re used to.This cake uses Olive Oil instead of butter and going by the response in our family it certainly looks like a new favorite!

Olive Oil Cake

Olive Oil Cake is a easy dessert that uses ingredients you have on hand..I first thought this cake would have a strong Olive oil flavor but it has just a slight hint of the Olive Oil along with the vanilla and tastes delicious.Its perfectly moist and fluffy.I’ve kept it simple although you can make different variations using lemon or orange.I followed this recipe except for the orange juice and zest since I didn’t have any at hand and it still turned out perfect!A little sprinkling of powdered sugar is all you need to dress it up.

Olive Oil Cake

Ingredients
  

  • 1 ¼ cups all-purpose flour
  • ¾ cup sugar
  • 2 eggs
  • ⅓ cup olive oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • Confectioners' sugar for dusting

Instructions
 

  • Preheat the oven to 350 degrees F.
  • Grease and flour a 9-inch square cake pan. Mix together the sugar and eggs in a medium bowl with a hand mixer on medium speed until blended and light.
  • Drizzle in the olive oil and vanilla and mix until light and smooth.
  • Sift together the flour, baking powder, baking soda and salt in another bowl.
  • Add the flour mixture half at a time to the wet ingredients and mix on low just to bring it together.
  • Pour into the prepared cake pan and bake, 25 to 30 minutes.
  • Let the cake cool 15 minutes, dust with confectioners’ sugar and serve.

Magic Cake

Magic Cake

I finally did it.

I made the Magic Cake. And I ate it.

And I almost ate all of it.

Had to stop myself since I was taking it to a friends’ for a potluck. Not to mention it was a hit with everyone and even the kids gave it a thumbs up. I’ve been drooling at the pics on the web for many many months and being a big custard lover I’ve always wanted to make this.

I have to warn you though.Its addictive.

The magical layers that hit you as you take a bite.First the semi soft layer at the bottom followed by the custard in the  middle followed by the firm and slightly golden top layer.Its an amazing dessert and so super easy!The best part is that it only requires one simple batter and the magic happens once its in the oven.The three layers form as the cake bakes on a low temperature setting beautifully.Once cooled cut in into desired squares and enjoy this indulgent treat to your heart’s content.I followed this recipe from Jo Cooks and it turned out just perfect!

Ingredients
  

  • 4 eggs separate yolks from whites at room temperature
  • 1 tsp vanilla extract
  • 150 g 3/4 cup sugar
  • 1 stick or ½ cup butter melted
  • ¾ cup of all purpose flour
  • 2 cups milk lukewarm
  • powdered sugar for dusting cake

Instructions
 

  • Preheat oven to 325 F degrees. Grease a 8 inch x 8 inch baking dish.
  • Separate eggs and add the egg whites to a mixer and mix until egg whites are stiff. Place egg whites in a bowl and set aside.
  • Beat the egg yolks with the sugar until light.
  • Add butter and vanilla extract and continue beating for another minute
  • Add the flour and mix it in until fully incorporated.
  • Slowly add the milk and beat until everything is well mixed together. Add the egg whites, a third at a time and gently fold them in using a spatula, repeat until all egg whites are folded in.
  • Pour batter into baking dish and bake for about 70 minutes or until the top is lightly golden. The baking time could vary depending on the oven, so take a look at around 40 minutes and see how it looks.
  • Sprinkle some powdered sugar after cake has cooled and cut into squares.
  • Enjoy.

Chocolate Chip Challah Bread Pudding with Vanilla Bourbon Sauce

As promised I’m sharing with you this amazing Bread Pudding using the leftover Challah bread that I’d baked in my previous post.For those of you who haven’t entered my Tribes-A-Dozen Challah Bread mixes Giveaway there’s still time to enter!!

Challah Chocolate Chip Bread Pudding

Bread Pudding has to be the most amazing dessert ever.Period.Its absolutely effortless and in my opinion the best dessert for a crowd.I had guests over during the kids’ spring break and I made this for them.Needless to say, they went for seconds and thirds.I also have to add here that using Challah made this dessert richer and delicious.

Chocolate Chip Challah Bread Pudding with Vanilla Bourbon Sauce

The layers of delicious custard all soaked up into the bread is the most comforting end to any meal and I just cannot get enough of it!The chocolate chips added some chocolate magic into the dish.To go along with it I made an instant Vanilla Bourbon Sauce that took this dessert to even greater heights.Enjoy.

Chocolate Chip Challah Bread Pudding

Ingredients:

Challah Bread-5 cups cut into 1 inch cubes
Melted Butter-2 tbsp
3 eggs
Vanilla-1 tbsp
Milk-2 Cups
Sugar-3/4 cup
Semi sweet Chocolate Chips-1/3 cup

Process:
Preheat the oven to 350 degrees.Beat together eggs,butter,vanilla and milk.
Add sugar and mix until dissolved.
Arrange bread cubes tightly into a 9 inch baking dish.
Pour liquid over the bread.Press the bread down gently all over.
Sprinkle chocolate chips all over.
Leave for 30 minutes.
Bake for about 30-45 minutes or until a toothpick inserted in the center comes out clean.Enjoy.

Instant Vanilla Bourbon Sauce

Ingredients:
Instant Vanilla pudding-3 tbsp
Milk-1/2 cup
Bourbon-2 tbsp

In a microwave safe bowl mix the pudding mix and milk.Stir and cook for about a minute or two until thickened.Add some more milk if too thick.Add the bourbon and mix well.Drizzle all over the bread pudding.

Baked Custard Cups

Who doesn’t like recipes that use fewer ingredients?In our busy world sometimes less is more and when it comes to cooking/baking we’re always drawn to recipes that are easy and the shorter the list of ingredients the better.Our Sunday Supper team is doing just that today and we’ve got for you tempting recipes using 5 ingredients or less!

I chose an easy dessert that’s decadent and elegant at the same time.That’s not all.Its made using just 4 ingredients.Thankyou!We love puddings over here and anything that calls for eggs with milk and vanilla,warm, baked in the oven is a sure shot hit in our family.

Baked Custard Cups

These custard cups are taken out of the oven just barely set and have a jiggly centre.The texture that defines decadence to me.The simple sweet flavors are the perfect ending to your favorite meal and with just 4 ingredients that you always have on hand its one of those things that you just have to try.


Baked Custard Cups

Ingredients:
Milk-1 1/2 cups
Eggs-2
Vanilla Extract-1/4 tsp
Sugar-3/4 cup

Process:
In a mixing bowl beat eggs and sugar until creamy.
Add milk and vanilla and whisk until well incorporated.
Pour the mixture into 4 individual ramekins and place the ramekins on to a baking dish.
Fill the dish with water until halfway up the sides of the ramekins.
Bake in a preheated 350 degree oven for 50-55 minutes.
Serve it warm or chilled.
Enjoy!
