Mango and Strawberry Cream

Summer months are my favorite since I get to enjoy my favorite fruit, Mango!Yes, I love mangoes and cannot have enough of them all summer long.I use them in my smoothies,salads,salsa,pies and of course the dessert I have for you today.It’s simple with pure flavors just the way I like my desserts in the summer.

Mango and Strawberry Cream
Its just my take on the good old Fruit Cream that I’ve enjoyed since childhood when Mom used heavy cream every time.Although it tasted delicious, I cannot imagine eating it for my dessert today due to the high fat content and the calories in there.But,I’ve made a healthier version of this family classic using mascarpone and greek yoghurt and it tastes delicious.

It can be whipped-up in no time and you can use any fruit on hand.Its an easy chilled dessert that can be made ahead especially when you’re entertaining and also looks super cute.Garnish with a little mint for the finishing touch.Who says healthy cannot be delicious!Enjoy.

Ingredients
  

  • Strawberries-1/2 cup hulled
  • Ripe Mangoes-1/2 cup peeled and chopped
  • Mascarpone Cheese-2/3 cup
  • Greek Yoghurt-1/2 cup
  • Honey-2-3 tbsp
  • Vanilla Extract-1 tsp

Instructions
 

  • Mix the mascarpone, greek yoghurt,honey and vanilla with an electric mixer until smooth and creamy.
  • Arrange the fruits and cream in any order that you prefer,into a serving dish.
  • Garnish with a little mint.
  • Serve chilled.

Aaron E’s Favorite Apple Coffee Cake #Sunday Supper with “The Mom 100 Cookbook”

Today is a whole new level of excitement on Sunday Supper,since I’ve never done anything like this before!This week we’ve joined with Katie Workman author of “The Mom 100 Cookbook” and we’ll be cooking our favorite portable dishes for friends and family from her book!

Katie’s book as the name suggests has 100 recipes for Moms that are easy, affordable and a great way to enjoy food with family and friends.I particularly love the story behind each recipe and “what the kids can do” section on how to involve the kids in making the dish!!
I’ve chosen Aaron E’s Favorite Apple Coffee Cake mainly because we love apple desserts in my family and my kids like to bake with me!

The aroma of the Cinnamon Sugar wafting through the air, my house smelt wonderful once the cake was in the oven. I loved how easy this
recipe was and the fact that it uses staple pantry ingredients saving you the time and effort to run to the stores! The cake came out moist and delicious and the Fuji apples gave them an extra sweet flavor. The cinnamon sugar just brought it all together and my kids enjoyed their triumph in the kitchen J

Aaron E’s Favorite Apple Coffee Cake-From The Mom 100 Cookbook by Katie Workman
Ingredients:
For the Cinnamon Sugar Topping
Granulated Sugar-1/4 cup
Ground Cinnamon-1 tsp
For the Coffee Cake
Unsalted Butter-8 tbsp (1 stick) plus butter for greasing
the pan
All Purpose Flour-1 ¼ cup
Baking Powder-2 tsp
Kosher Salt-1/2 tsp
Granulated Sugar-1/3 cup
Large Eggs-2
Pure Vanilla Extract-1 tsp
Whole Milk-2/3 cup
Large Apple -1 peeled, cored and coarsely chopped
Process:
Make the cinnamon sugar topping by mixing together the
granulated sugar and cinnamon. Set aside.
Preheat the oven to 375 F.
Grease a 9-inch square or round baking pan.
Place the flour, baking, powder and salt in a small bowl and
whisk to mix. Set aside.
Place the sugar and butter in a medium sized bowl and using
an electric mixer beat them until fluffy (about 3 minutes).
Add the eggs one at a time and then add the vanilla. Add the
flour mixture and the milk alternatively in about 2 batches of each, beating
after each addition until almost incorporated. At the end you still want to see
streaks of flour and milk.
Using a wooden spoon, fold in the apple until everything is
just combined. Spoon the cinnamon sugar topping over the top.
Bake the coffee cake until golden brown and a toothpick
inserted in the middle comes out clean, about 30 minutes.
Let the cake cool in the pan on a wire rack.
Serve the coffee cake warm or at room temperature!

Mango Lassi Frozen Yoghurt – #Ice Cream Love

I love the summer.The glistening sunshine peeking through the windows every morning, just brings a smile on my face :)!The days are so bright and beautiful!And during these hot days the one thing that everyone craves for is a nice cool bite of a frozen treat like an Ice Cream maybe? Incidentally that’s the theme for this month’s blog-hop!!

For somebody like me who’s never ever made an Ice-Cream or any frozen treat for that matter, this surely was a challenge.So I came up with the most easiest thing to make EVER using just 4 ingredients!!I don’t know what planet I was living on until now, that I never ever attempted to make a frozen yoghurt!I’m so glad I’m a part of this fabulous blog-hop because it forces me to venture out of my comfort zone and try things that I would never try otherwise 🙂

By now you  must know that I love mangoes!My two recent posts have included mango in some way and I couldn’t stop at that.Since my family cannot get enough of Mango Lassi in the summer months, it was only natural that I went for the Mango Lassi Frozen Yoghurt.I was amazed at the pure mango flavor bursting through in every bite!I’ve  used full fat yoghurt just to make it creamier.The subtle hint of the cardamom just gives it a perfect spice hit and the honey makes it perfectly sweet!A creamy and delicious treat perfect for these hot summer months~

Mango Lassi Frozen Yoghurt

Ingredients
  

  • Large ripe Mangoes-2 1 cup-pureed
  • Thick Full fat Plain Yoghurt-1 cup
  • Honey-1/3 cup
  • Cardamom crushed finely-1/2 tsp

Instructions
 

  • Peel and chop the mangoes. Place along with all the other ingredients in a blender/hand mixer and blend until its smooth and creamy.Check for sweetness.If you want it more sweeter add more honey and mix again.
  • Pour the mixture in a container and freeze for about 4-5 hours.If its too hard,just microwave for 30 seconds and enjoy!

Blackberry Cobbler – #Berrylove Bloghop

Today I’m going to share with you the new found love of my life, the ‘Fruit Cobbler’.How else would you explain the fact that in the past month I’ve made it not once or twice or thrice but 5 times!! I’m not kidding!Its THAT good and with Berry for our theme for this month’s bloghop, I knew exactly what I was going to be making AGAIN. 🙂

Blackberry Cobbler

Cobbler is a classic American deep-dish fruit Dessert where the fruits are either enclosed in a thick fluffy pillow of a butter batter or have a drop biscuit or crumb topping.While I’ve had the fruits with crumb toppings before, the fruits enclosed in the crust was new to me.

I tweaked the original recipe by cutting down on the butter and used Olive Oil instead in my batter and trust me it tasted delicious.I didn’t miss the butter in my batter at all!I’ve made these using blackberries here,but you can use any seasonal fruit like apples, peaches,plums,mixed berries etc.The lemon sugar is the key in this recipe as it adds that sweet lemony touch to the Dessert!

The batter rises and covers up the fruit and the berries oozing out their gorgeous juices intermingling with the chewy moist crust!Oh the simple pleasures of life~

Blackberry Cobbler #Berrylove Bloghop

Ingredients
  

  • Unsalted Butter-2 tbsp cut into 4 pieces
  • Olive Oil-1/2 cup
  • Sugar-1 1/2 cup
  • Lemon Zest-1 1/2 tsp
  • Blackberries-3 cups
  • All Purpose Flour-1 1/2 cups
  • Baking Powder- 2 1/2 tsp
  • Salt-1/4 tsp
  • Milk- 1 1/2 cups I used 2%

Instructions
 

  • Preheat the oven to 350 degrees.
  • Place 2 tbsp of cut-up butter into a baking dish and transfer into the oven.Heat until the butter is melted.
  • Meanwhile mix the lemon zest with 1/4 cup of sugar in a bowl.Keep aside.
  • Combine flour, remaining sugar, baking powder and salt in a bowl.
  • Whisk in the milk,olive oil into the flour mixture until smooth.
  • Take the baking dish out of the oven and make sure to spread the melted butter evenly so that it coats the entire bottom of the dish.
  • Transfer the batter into the dish.Arrange the blackberries evenly over the top.
  • Sprinkle the lemon sugar and bake until the golden brown edges are crisp about 40-45 mins.Serve warm.

Vanilla Olive Oil Muffins

My kids love to help me whenever I’m in my kitchen baking.This time round my four year old was very excited to be my helper.While I was getting the ingredients ready he had taken out a large bowl and the whisk on the table ready for mixing!!Of late I’ve been coming across a lot of cake and muffin recipes with Olive Oil which cuts off the fat content by a lot.
Vanilla Olive Oil Muffins
Olive Oil muffins sounded so good, but unfortunately I’d never tasted them and was always intrigued every time I saw the recipes posted by my baker friends.So I decided to try making these muffins and figure out myself!My son loves vanilla hence, Vanilla Muffins it had to be!

Oh my, what a delicious, moist treat this was? I have to tell you that these are now my absolute favorites and thanks to all my baker friends out there, I was inspired to bake with Olive Oil.You can clearly taste the Olive Oil in every bite.The yoghurt make it super moist and so good!My son enjoyed it too and was very proud that it was his creation 🙂 My daughter enjoyed it for her school snack the following day!Hubby who is very finicky when it comes to desserts also liked it!That tells it all I guess 🙂

Makes 12 muffins

Vanilla Olive Oil Muffins

Ingredients
  

  • 1 ¾ cup All purpose Flour
  • Pinch of salt
  • 1 ¼ tsp Baking Powder
  • ¼ tsp Baking Soda
  • 1 cup Sugar
  • ½ cup Olive Oil
  • ¼ cup Plain Yoghurt
  • ½ cup milk
  • 1 Egg
  • 1 Egg White
  • 1 ½ tsp Vanilla extract

Instructions
 

  • Preheat the oven to 350 degrees F.
  • Line standard muffin pan with paper liners.
  • Sift together Flour,Baking Powder, Baking Soda and Salt.
  • In a mixing bowl mix the Oil,Yoghurt, Milk,Egg, Egg White and Vanilla Extract.
  • Mix well and add the dry ingredients and just mix until combined.
  • Take an ice cream scoop and divide between 12 muffin cups.
  • Bake on the center rack in the oven for 18-20 minutes or until slightly golden.
  • Enjoy!
