Indian Spiced Chicken Meatball Wraps #Lunchbox #SundaySupper

When it comes to making your own lunch or your kids’ lunches you’re sometimes lost as to what to pack.School starts in a few weeks and I can see myself fretting over what to pack in my Ten year old’s lunchbox. For starters, my daughter does not like sandwiches and I end-up making some kind of pasta dish almost every other day for her lunch.I know that she’s fond of Wraps but then again she doesn’t want cold-cuts inside and that has got me thinking of coming up with something that she would love, like these Indian Spiced Chicken Meatball Wraps that are healthy and packed with flavor to please all those picky eaters (kids and adults)!

My Indian Spiced Chicken Meatballs are baked in the oven, have tons of flavor from the coriander,garam masala, cilantro and mint!Whether you are a cilantro lover or hater you will love this recipe since I’ve used a combination of mint and cilantro that balances the flavor of both the herbs and is used extensively in Indian cooking.The grated onion keeps these meatballs moist and you can make  a big batch of these and freeze them for later use.Use them in soups,curries,even as a tasty appetizer for your next party!The possibilities are endless!

For the wraps I use Whole wheat tortillas and any salad mix.I also make a simple raita using Plain Yoghurt with some salt and ground toasted cumin.You pack each item separately and assemble at lunchtime.Its a great variation from the usual and a fun way to enjoy Indian flavors!I made these for our dinner yesterday and got a big thumbs-up from my both my kids! 🙂

Indian Spiced Chicken Meatball Wraps

Ingredients
  

  • Whole Wheat Tortillas-4
  • Salad mix-2 cups

For the Meatballs

  • Chicken Mince breasts and thighs-1 lb
  • 1 small onion- grated or pureed
  • Crushed Ginger-1/2 tbsp
  • Crushed Garlic-1/2 tbsp
  • Ground Coriander-1 tsp
  • Garam Masala- 1/2 tsp
  • Chopped Fresh Cilantro -1/2 cup
  • Chopped Fresh Mint-1/2 cup
  • Salt-to taste

Raita

  • Plain Yoghurt-2 cups
  • Cumin Seeds-1-2 tsp
  • Salt-to taste

Instructions
 

  • Preheat oven to 375 degrees.
  • In a dry pan, toast the cumin seeds on medium until slightly golden.Allow to cool and crush using a pestle mortar.
  • Mix the Raita ingredients in a bowl and keep in the fridge.
  • Mix all the meatball ingredients in a mixing bowl.
  • Make small balls and place on a greased foil lined baking sheet.
  • Spray with cooking spray all over the top.
  • Bake in a preheated oven for 15-20 mins until slightly golden.

To assemble

  • Take a Tortilla Wrap and place some salad greens in the center.
  • Add 4-5 meatballs and pour some raita all over.
  • Roll and enjoy!

Grilled Peaches and Halloumi with Honey and Coconut

Since we’re left with these last few weeks of summer I decided to grill some gorgeous peaches that are in season right now!I also recently discovered Halloumi Cheese at Trader Joe’s and thought of grilling those along with my Peaches. Halloumi is a Cypriot semi hardened cheese made with sheep and goat’s milk.Its great for grilling since it holds quite well as compared to other cheeses. I love grilling fruits since they bring out their natural sugars and caramelize with beautiful grill marks on them.Great to have them in a salad or as a light dessert if you’re having a BBQ!

The drizzle of Honey adds the sweet element and the toasted Coconut was a last minute garnish idea that popped in my head while the fruit and cheese were on the grill.I love toasted coconut in everything, just gives a lovely nutty flavor to dishes.Last but not the least was the sprinkling of black pepper to balance the saltiness of the Halloumi and it also spiced it up a bit!We loved the flavors and enjoyed it for a little dessert after our meal 🙂

Grilled Peaches and Halloumi with Honey and Coconut

Ingredients
  

  • Peaches-3 pitted and sliced
  • Halloumi Cheese-6-8 pieces
  • Honey -3 tbsp
  • Shredded Coconut-3 tbsp
  • Black Pepper-1/4 tsp

Instructions
 

  • On a lightly oiled hot grill place the peaches and the halloumi cheese for about a minute or two.
  • Flip them over to develop color on the other side.
  • Toast the shredded coconut in a dry pan over medium heat until slightly golden.Let it cool.
  • Arrange on a platter and drizzle honey all over.
  • Sprinkle the toasted coconut and black pepper all over.
  • Enjoy!

Tofu Hariyali Kebabs (Tofu Kebabs in Cilantro Sauce) #SundaySupper

I’m so excited to be back for our Sunday Supper after a month!During my India holiday,my brother had made an itinerary for me even before I’d landed and that included tasting some of the best foods in and around Delhi!Aww he’s so sweet! 🙂

Needless to say we over indulged in all sorts of delicacies like the succulent Kebabs at The Kebab Factory,some more Kebabs and a tasty Awadhi Mutton Biryani from the Lucknow themed restaurant at Culture Gully,Kingdom of Dreams.Situated in Gurgaon,Culture Gully is THE place for foodies who want to try India’s diverse foods and flavors all under one roof and it has various themed restaurants and street bars, arts and crafts etc together with some beautiful architecture depicting each of the 14 States it represents!There is something for every palate from steamed dumplings in Sikkim to the spicy dishes in Kerala.You can see the chefs doing what they love the most and the aroma just makes you hungry! Its visually stunning and one of the best things that has come up in the last few years.I really enjoyed the food there and would recommend it to anyone visiting Delhi.

Next on our list were the famous Kathi Rolls at Nizams with the tasty Seekh Kebab wrapped around the soft Egg coated outer layer and it tasted amazing!

At home I enjoyed my Mom’s amazing Fish dishes especially the Pomfret marinated in aromatic spices and shallow fried, my sister-in-law’s tasty Fried Chicken that was crispy and golden on the outside but moist and juicy on the inside and the best dish of my trip,Dad’s famous Mutton with just the right balance of spices cooked for a good few hours with that deep dark color that’s irresistible.I’m telling you, its the best thing I ever ate.

Scrumptious and SPICY!!!When I learnt that ‘Spice it Up’ was our theme this Sunday Supper I couldn’t be happier since its what I love in my foods.I love it in savory and sweets.For this event I thought of using some inspiration from my holiday and create for you amazing Tofu Kebabs with Green Sauce or Cilantro sauce!I had a similar Kebab made with Chicken and it was delicious.You could use any meat,fish or Paneer for this preparation.’Hariyali’ means greenery in Hindi and since the cilantro sauce is green these kebabs have derived their name from it.

The sauce is very simple and comes together in the food processor.The Tofu is coated with the sauce and cooked on a griddle pan.The left-over sauce is also served as a dip for the kebabs.The sauce gives so much flavor and also a lovely color to the Tofu.Sprinkle some Chat Masala at the end and you have one amazing starter that will be the star of any party!Enjoy 🙂

Notes:

Make sure the pan is well oiled and heated before placing the Tofu pieces.

Leave it for about 2 minutes before flipping gently from underneath.If it gets stuck just turn off the heat and leave it for some time.It should come off easily.Repeat the process on the other side.

Tofu Hariyali Kebabs-Tofu Kebabs in Cilantro Sauce

Ingredients
  

  • Extra Firm Tofu-15 oz pck
  • Cilantro-2 cups
  • Jalapeño or green chili- 1
  • Garlic cloves-2
  • Oil-1 tbsp
  • Water-as required
  • Salt-to taste
  • Oil- for brushing
  • Chat Masala- for sprinkling

Instructions
 

  • Wash the cilantro and place them in a food processor along with garlic,jalapeño,oil and salt.Puree along with very little water until smooth.
  • Drain the Tofu of all the water and cube them into about 2 inch pieces.
  • Coat the pieces in the paste and place on a hot oiled griddle pan.Drizzle some oil over the top as well.
  • Let it sit for about 2 minutes before turning them gently from the bottom.They should be slightly golden.Repeat the process for the other side.
  • Arrange on a platter and sprinkle some chat masala all over.
  • Serve hot with the remainder sauce.

Thai Red Curry Chicken

Hi all!!I’m so excited to be back again after my holiday :)!!I have to admit though that I’ve hardly cooked in the past month and have been enjoying all the pampering from my parents back home :)!I’m totally refreshed after this break and cannot wait to share some exciting recipes with you all!

Thai Red Curry Chicken

For starters I’ve got for you an easy weeknight dinner that I cooked first day back.Its a family favorite and comes on the table in no time!I love preparations like this where you get the health benefits of both meat and veggies in the same dish.I’m a big fan of Thai Kitchen Red and Green Curry Paste.I have them in my pantry always and they really come in handy when you’re looking to cook something quick and exotic!All you need is some coconut milk which is also one of my favorite pantry items that I use a lot.

The lemongrass and galangal together with spices brings the redolence so unique to Thai dishes and the creamy coconut milk is all you need to give that rich consistency.Enjoy!

Ingredients
  

  • Chicken Breasts cubed-1 lb
  • Thai Kitchen Red Curry Paste-3 tbsp
  • Ground Coriander-1/2 tsp
  • Ground Cumin-1/2 tsp
  • Red Peppers-1/2 cup
  • Yellow Peppers-1/2 cup
  • Coconut Milk-13 oz can
  • Oil-2 tbsp

Instructions
 

  • Heat oil in a skillet and add the Thai Red Curry paste.
  • Add the cumin and coriander and gently sauté on medium heat for a couple of minutes.
  • Add the cubed chicken pieces and sauté for about two minutes.
  • Add the coconut milk, bring to a boil, reduce the heat and simmer until the chicken is almost cooked.
  • Add the peppers and continue to cook until done.
  • Serve hot with steamed rice!

I’m having a great time with my family in India as my holiday continues for a few more days.India is a land of vibrant colors,deafening sounds,beautiful sights and some of the most amazing foods you will ever eat in your lifetime!While I indulge in the most amazing Galouti Kebabs and Shami Kebabs with my family here in India,I’ve got for you an amazing Cosmopolitan that my brother made for me from his repertoire of cocktails that he loves to serve.The perfect women’s drink,and a beautiful color it felt like the best thing to enjoy on hot and humid days like these!

The use of the Cointreau gives that subtle orange flavor and the lime juice adds the perfect tang resulting in a delicious drink that’s not too sweet or tart and has a lovely bright pink color.Its the perfect drink for a crowd and super easy.Enjoy 🙂

  • Vodka-1 oz
  • Cointreau Orange Liqueur-1 oz
  • Squeeze of fresh lime juice
  • Cranberry juice-1 oz
  • Ice

Instructions
 

  • Place all ingredients in a shaker and fill with ice.Shake hard.
  • Strain into a Martini Glass.
