Chocolate Drop Cookies

Cookies are a universal treat.And cookies with a chewy texture are the ones that we love over here.Add chocolate to that and its some serious pleasure.

The cookies I’ve got for you today are the easiest cookies you’ll ever bake.All you need is some really good Cocoa and I’ve used Cadbury’s Bournville Cocoa that I bought from Cadbury World in the UK during our last visit and I have to tell you that the aroma and the flavor is just phenomenal.

The cookies are sweet, sightly chewy, slightly crispy around the edges with a rich chocolate flavor coming through.They are so sinfully good.I must advice you to make a big batch since they will disappear in no time!These are also great as homemade Holiday gifts for your loved ones.Enjoy!

Find the original recipe over here.I have omitted the nuts and granulated sugar and halved the recipe.Makes about 25-30 cookies.

Ingredients
  

  • All purpose flour-1 cup
  • Unsweetened Cocoa I used Cadbury's-1/4 cup
  • Baking Powder-1/2 tsp
  • Salt-1/8 tsp
  • Unsalted Butter softened 4 Ounces-1 stick
  • Light brown sugar-1/2 cup+1/3 cup
  • Large Egg-1
  • Vanilla Extract-1/2 tsp

Instructions
 

  • Preheat the oven to 350 degrees.
  • Line a baking sheet with parchment paper.
  • Sift together the flour, cocoa, baking powder, and salt. Keep aside.
  • Cream butter and sugars until well mixed. Beat in the egg and vanilla.
  • On low speed, beat in flour mixture a little at a time, until well blended and smooth.
  • Drop chocolate cookie dough onto your parchment lined baking sheets by rounded tablespoons, about 2 inches apart.
  • Bake for about 12-13 mins until they are barely set.Don't over bake.
  • Cool pan on rack for about 5 minutes.
  • Transfer chocolate cookies to rack to cool completely. Enjoy!

on an autumn day

the breeze,the trees

rustling in the wind

the colorful leaves

falling to the ground

the crunchy piles

the magic of Fall

I revel in this joy

as I take my spoon

a bite is all I need

to make me swoon

The soft apples

the warm cinnamon

the crumbly topping

warm from the oven

the aroma,the delight

on my daughter’s face

that mama made her favorite”

Yeah that’s right,its my daughter’s favorite dessert!Well, you certainly don’t have to wait for autumn to enjoy this dessert. And if you’re like her you will want this all year round!Apple Crumble is her most requested and I make it frequently.But this time round I used Almond Flour instead of All Purpose Flour in the topping and she still loved it!It makes for a rich buttery nutty topping that I’m really fond of and I really like the flavor.In addition, its rich in protein and anti-oxidants and ideal for baking.So even if you don’t have a Gluten allergy you could still use Almond flour for its health benefits.

I’ve made them in individual ramekins for easier serving.Serve it with whipped cream ,Greek Yoghurt ,custard or Ice cream to take it to another level!The best part is that its so super easy and you can just eyeball the ingredients.Its one of those desserts that’s literally no work but comforts you like none other.It feels like you’ve really put an effort into it but you know it better ! 🙂

Ingredients
  

  • 3 Granny Smith Apples- peeled cored and sliced
  • Ground Cinnamon-1 tbsp
  • Brown Sugar-1 tbsp

For the topping

  • Almond Flour-1 cup
  • Chilled butter cubed-2 tbsp
  • Packed Brown Sugar -2 tbsp

Instructions
 

  • Mix the apples,cinnamon and brown sugar and place in individual ramekins.
  • Mix the topping ingredients by hand or in a food processor until crumbly.
  • Cover the apples with the topping and bake in a preheated oven at 375 degrees for 25 minutes until the topping is slightly golden.
  • Serve with whipped cream or ice-cream!

Healthy Banana Muffins

Muffins are a great way to enjoy an easy breakfast or a snack!And if you like them really simple, soft and super  moist, then look no further, since I’ve got for you the most delicious basic muffin recipe that will not disappoint!I’ve made this recipe so many times with my 4 year old who loves to mash up the bananas while I get the other stuff ready 🙂

I found a basic muffin recipe in ‘Taste Of Home’ magazine and made some changes to make it more healthier and it couldn’t have been better :)The use of wholewheat flour and brown sugar makes these the ideal nutrition packed breakfast or snack for kids and adults.The bananas add that extra moistness and incredible flavor to these beauties.Needless to say,they’ve become a staple in our house!.Healthy, wholesome and guilt free 🙂

Healthy Banana Muffins-Makes 12

Ingredients
  

  • Ripe Bananas-3 medium sized peeled
  • Whole Wheat Flour-1 cup
  • All Purpose Flour-1/2 cup
  • Baking Soda-1 tsp
  • Brown Sugar-1/2 cup
  • White Sugar-1/4 cup
  • Salt-1/8 tsp
  • Large Egg-1
  • Vegetable Oil-1/3 cup
  • Vanilla extract-1 tsp

Instructions
 

  • Preheat oven to 375 degrees.
  • In a deep mixing bowl mash up the bananas.
  • Add the egg,vegetable oil and vanilla.Mix together.
  • In a separate bowl or plate mix the flours,sugar, salt and baking soda.
  • Add the dry ingredients into the wet ingredients and mix gently with a wooden spoon until well combined.Do not overmix.
  • Transfer into a greased muffin tin and bake for 18-20 minutes or until a toothpick inserted in the center come out clean.
  • Once done,transfer on a cooling rack to cool.
  • Enjoy!

Pumpkin Donut Puffs #SundaySupper

In May 2012,I received an invitation to join a group called SundaySupper.At that time I’d just heard about them, but didn’t know much.I accepted the invitation.Little did I know that in less than a year’s time it would become a huge movement to bring back Supper Around the Family Tables in homes across America!An initiative started by the lovely Isabel of FamilyFoodie our group now consists of a vast number of bloggers who inspire each other and so many people out there to serve homemade meals and bring families together at mealtimes!As #SundaySupper celebrates its First Anniversary I feel very fortunate to be a part of this amazing community that has inspired,educated, supported and nurtured the blogger in me.Its a community filled with some of the most amazing people I’ve come to know and become friends with!

As part of this celebration we’re cooking dishes inspired by our #SundaySupper members in the past year!I’m very excited to choose a recipe of one of my most admired friends from this group Nicole @Daily Dish Recipes and I’m making her Pumpkin Donut Puffs!The moment I saw this recipe at our #SundaySupper Event  I knew I had to try these!Our family loves Pumpkin desserts and this was no exception!

These puffs are soft,fluffy, and oh so delicious!The only change I made to Nicole’s recipe was adding Cinnamon and lowering the amount of Pumpkin Spice, since my kids find it a bit overpowering. Everything else is the same.It came out delicious and we’re enjoying these little puffs as a cute little snack 🙂 Thankyou Nicole for a wonderful recipe!

Pumpkin Donut Puffs #SundaySupper

Soft puffs using Pumpkin for your dessert or snack!

Prep Time 10 minutes mins
Cook Time 10 minutes mins
Total Time 20 minutes mins
Servings 24 Puffs

Ingredients
  

  • All Purpose Flour- 1 3/4 cups
  • Baking Powder- 2 tsp
  • Salt-1/2 tsp
  • Pumpkin Pie Spice-1 tsp
  • Cinnamon-1 tsp
  • Vegetable Oil-1/3 cup
  • Brown Sugar- 1/2 cup
  • Egg-1
  • Vanilla Extract- 1 tsp
  • Pumpkin Puree-3/4 cup
  • Milk-1/2 cup

For Cinnamon Sugar Coating

  • Melted Unsalted Butter-1 stick
  • Sugar- 2/3 cup
  • Cinnamon-2 tbsp

Instructions
 

  • Preheat oven to 350 F and spray mini muffin tins with non-stick cooking spray.
  • Combine the first five dry ingredients in a bowl and whisk.
  • In a separate bowl, mix the oil, brown sugar,egg,vanilla, and pumpkinMix well.
  • Pour the liquid into the dry ingredients and blend until combined. Don’t over mix.
  • Fill a mini muffin tin up with batter almost to the top of each cup. Bake for about 10-11 minutes or until a toothpick comes out clean
  • For the Cinnamon Coating
  • Melt a stick of butter in a small bowl.
  • In another small bowl, mix the sugar and the Cinnamon.
  • While the donuts are still warm, dip them first in the melted butter and then roll them in the Cinnamon Sugar mixture.
  • Place on waxed paper or cooling racks to finish cooling.
  • Enjoy!
