Samosas #GlobalStreetFood #SundaySupper

25 | 08 | 2013
By Soni Sinha

Sold in every nook and corner of any street in Northern India,Samosas are the quintessential Indian street food! They’re enjoyed by a multitude of people each day every day.If you’re out on the streets in Delhi, you will always see vendors selling piping hot crispy samosas served with Tamarind Chutney to the people gathered around the stall eager to get a taste of it.The flaky crisp outer layer that leads into the delicious soft potatoes and peas spiced to perfection with some heat, some tang is one of the most well known foods from India. And its devoured by so many across the globe.

Samosas 8

If you’re in India you never really make Samosas at home since they’re easily available everywhere. When you have unexpected guests Samosas are the quick fix snack since there will always be some vendor at the end of your street frying Samosas! When I first arrived in the UK we found this little Indian sweet shop that sold Samosas, but they were nowhere close to what I was accustomed to.But,I still bought them since I was craving them so badly. But that’s always the story, somehow I’ve never had good samosas outside India. When our Sunday Supper group came up with the idea of Global Street Food I knew I had to make Samosas, but the problem was I’d never made them before!I called my most trusted Vegetarian Chef, my Mom for some tips and tried making these for the first time ever!

Samosas 2

Mom also asked me to fry these in warm oil as opposed to hot oil, since they tend to become soggy otherwise. For the filling you can go with  either a vegetarian or meat option. The ones commonly sold on the streets are the Vegetarian version with potatoes and peas. The filling is delicious with all the spices and the chillies that add a slight heat in the background. I’ve also used Dried Mango powder (Amchur) along with Black Salt (Kala Namak) that is easily available at your Indian Grocer! The samosas came out perfectly crispy on the outside and the filling was spot-on!

Samosas 9

They’re a little time consuming but the end result is worth the effort! These are best enjoyed right after they are fried to bite into that crisp pastry. You could also cheat by opting for Phyllo sheets if you wish to make the process easier and bake them instead of deep frying, but I went with the traditional method just the way they’re sold on the streets in India!

Couscous Cakes

03 | 05 | 2013
By Soni Sinha

Couscous is on the menu today! The tiny jewels of semolina granules coated in wheat flour is packed with fiber, vitamins and minerals. The key to a good couscous lies in the flavor you add to it, since its quite flavorless on its own.It cooks quickly and is the perfect lunch when you’re in a hurry!I’d picked up a packet of Whole Wheat Couscous from Trader Joe’s with the purpose of using it in some way and looked up the web for some inspiration.I came across Giada’s Recipe for Couscous Cakes that sounded unique with an Indian twist and I instantly knew I had to try it!

Couscous Cakes

I made some changes to the original recipe by using parsley instead of coriander and added some dried cranberries and almonds for some tart and crunch that works perfectly. The lemon zest gives a nice fresh flavor to the dish and the star of the dish clearly is the Mango Chutney that has all the delicious spices and ginger and juicy bits of mango that you get every now and then.

Couscous Cakes 1

The cakes turned out great and I really enjoyed all the flavors together! You can make these cakes ahead and store them in the refrigerator until required.Just shallow fry them at the last minute and serve your guests.A lovely recipe with an Indian touch that’s surely a keeper 🙂

Indian Spiced Tuna Balls (Tuna Chop) #SundaySupper

16 | 12 | 2012
By Soni Sinha

The horrific shooting in Connecticut has left us shaken and saddened. Beautiful, innocent little kids, their lives so inhumanely cut short. My heart goes out to the families and loved ones of these beautiful kids and teachers who were targeted for no fault of theirs. While we’ve all hugged our children a little tighter, embraced them a little longer, enjoyed our family time a little better, let’s not forget that these are the things that matter the most. These little moments of love with our families are priceless and a blessing.

As a Mom, I feel greatful for my life with my kids,my family, the time we spend each day, the little joys, silly laughs, funny antics all of them. The time spent in the kitchen together cooking and baking.Nothing is more pleasing to the eye, than my kids happily enjoying the food I cook for them.In the wake of this incident, these moments feel so precious. I’m praying for the families of those who lost their lives and I hope they find the strength to cope with this tragedy.

My dish for today is a easy appetizer, that is also a family favorite! My Tuna Balls are easy, bursting with flavor and stuffed with a surprise, Cranberries!Yes, the sweet and tart Cranberries are hidden in the center of each ball and give it so much body.My Tuna Balls have been quite popular with my friends and I think they make a perfect party starter! You can make these ahead and fry at the last minute. The balls are crispy on the outside but very soft and moist on the inside.

Indian Spiced Sweet Potato Patties

20 | 04 | 2012
By Soni Sinha

Indian Spiced Sweet Potato Patties

My newest craze these days are Sweet Potatoes. So rich in texture, taste and a nicer and healthier alternative to Potatoes.Packed with nutrition, rich in fiber, vitamins and beta carotene, this is a wonder vegetable that you can incorporate into your family’s diet. Its a versatile vegetable, that can be used in many different ways right from cutlets,to a simple mash, casseroles or desserts.

sweet potatoes

I’d originally planned on making sweet potato mash for dinner. The idea of making these into patties popped in when I’d peeled them up and I instantly changed my plan.I opened up my spice cabinet and threw in some coriander and cumin to give it a kick. The result is a luscious healthy appetizer or snack that you can enjoy guilt free!

The patties taste best when the natural sugars in the sweet potato caramelizes and imparts an earthy slightly charred flavor! The ginger kicks in along with the spices and the corn starch works as a binder. Its rustic and delicious!!I have been making it ever since and I’m sure you will too!

  • Green Chillies jalapeños-2 chopped finely
  • Ground Cumin-1 tsp

  • Cornstarch-2-3 tbsps

  • Take some of the mix and flatten it between your hands, into round shaped patties.
  • Heat oil in a non stick pan over medium heat.
  • Shallow fry until nicely brown and caramalized on both sides.Serve hot with some ketchup!
Notes: For best results
  • refrigerate the ready patties for about 20 minutes before you fry them
  • Use a Non-Stick pan to prevent them from sticking (do not use too much oil, just 2 tbsp on each side should suffice)
  • Let the patties develop a nice golden color on one side before you flip them.

Tandoori Salmon

18 | 02 | 2012
By Soni Sinha

I love Tandoori preparations. So simple, yet packed with flavor and irresistible! They look great on any table and are versatile enough to be served as an appetizer or a main dish. They look elegant, smell heavenly and are always a crowd pleaser. They’re one of my most popular party appetizers and I’ve made many different versions both Vegetarian and Non-Vegetarian.
Tandoori Salmon 4
They’re surprisingly easy and flavorful and do not require much effort. You can marinade them overnight and grill them the next day!I love using local ingredients and creating dishes with an Indian twist and this is one such example where I’ve combined my favorite preparation with my favorite fish Salmon!
Often you will find Tandoori dishes having a reddish color, that is due to the addition of food coloring and is purely optional.I have made mine without any coloring here.Enjoy!
