Easy Indian Lemon Chicken #SundaySupper
The weather is finally warming up and the days are absolutely gorgeous! The fresh produce during Spring is such a welcome sight with vibrant fruits and vegetables all around!Its also the time when citrus fruits are in abundance.Today being ‘Lemon and Oranges Day’ our Sunday Supper has teamed up to bring you some great citrus recipe ideas!I love citrus in my foods and desserts and the recipe I’ve got for you today is a tangy,easy and super quick chicken dish that tastes like spring in every bite!
Its ideal for this weather when you feel like having fresh and light meals.It takes no time to cook since we’re using Chicken Breasts.The process is fairly simple and starts off with sautéing the chicken pieces rubbed with a little salt and turmeric until slightly brown.The spices and yoghurt are then added to create a lovely sauce that you can scoop up with roti or rice!
This is a recipe developed especially for this #SundaySupper and it was a hit with the taste testers aka hubby and kids!I’ve tried to keep it very simple yet flavorful and I’m very glad it turned out this good 🙂
Ingredients
- Boneless Chicken Breasts-2 pieces (6-8oz each)
- Crushed Ginger-2 tsp
- Crushed Garlic-2 tsp
- Turmeric-1 tsp
- Grund Cumin-2 tsp
- Ground Coriander-2 tsp
- Garam Masala-1 tsp
- Red chili(paprika)-1 tsp
- Lemon Juice-2 tbsp
- Salt-to taste
- Yoghurt-1 cup (beaten)
- Oil-2 tbsp
Instructions
- Cut the Chicken into bite sized pieces and rub some turmeric and salt.Keep aside.
- Heat oil in a skillet and add the chicken pieces.
- Saute until slightly golden and almost cooked.
- Add the crushed ginger and garlic.Saute for about a minute.
- Add turmeric,cumin,coriander,garam masala and red chili.Saute on medium heat until oil separates from the sides.Add the lemon juice.
- Beat the yoghurt in a bowl.Take the skillet off the heat and mix the yoghurt into the chicken.
- Bring it back on the heat and keep stirring the whole mixture until it comes to a boil.Reduce the heat and continue to cook for about 2 minutes.Garnish with coriander.
- Serve hot with rice or roti!

Easy Vegetable Chowmein
With kids’ activities, homework, projects, weeknights tend to get really busy and that’s when you have to think of quick and easy recipes that are nutritious and tasty!One such easy option is to have a Noodles night, where Vegetables take center stage!My Vegetable Chowmein is packed with flavor, colorful veggies and comes together easily in a matter of minutes.You could use any Noodles you prefer for this recipe.I’ve used the brand ‘Ching’s’ available at my Indian Grocers.Ramen Noodles works really well too!
Indo-Chinese foods are very popular all over India and used to be our favorite take out choice almost every week!A typical Indo-Chinese menu consists of Chowmein, Chilli Chicken/Chilli Paneer,Manchurian Dishes amongst others and there’s ample choice for both Vegetarians and Non Vegetarians.The recipes are developed for the spicy Indian palate!They’re absolutely delicious albeit a bit greasy, but that’s the advantage of making them yourself, since you control the quality of ingredients.If you get a chance you should try them, since they’re very different from the authentic Chinese foods, but tasty nevertheless 🙂
My kids love to eat their veggies in Noodle dishes better than any other and I wonder if its the crunch or color or a combination of the two!And that’s why I make this dish so often!I start by boiling the noodles for two minutes, not any longer, since the noodles loose their texture!Once boiled I immediately run them in cold water.If you notice them sticking you can add a tablespoon of vegetable oil and mix them.The sauce is a mix of sweet and spicy,and its just my personal preference.I also use some Sriracha for the heat element along with Vinegar for some tang,Soy Sauce and some Ketchup!Its bursting with flavor and is absolutely delicious!
Delicious and flavorful, Vegetable Chowmein for an easy weeknight meal!
Ingredients
- Ching's Noodle (or any other)-1 pack (150 gms)
- Onion-1 sliced
- Crushed Ginger-1 tsp
- Crushed Garlic-1 tsp
- Baby Bella Mushrooms sliced-2 cups
- Green Peppers (capsicum)-1 large or 2 small- sliced
- Carrots-2 large peeled and sliced lengthwise
- Vegetable Oil-2 tbsp
- Salt-to taste
- Pepper-1 tsp
- For the sauce
- Soy Sauce -2 tbsp
- Tomato Ketchup-2 tsp
- Sriracha or hot sauce -1/2 tsp
- Vinegar-2 tsp
Instructions
- Boil the Noodles according to the instructions.Place under running water sread on a platter.Leave to dry while you prepare the veggies.
- In a wok,heat oil and add the onions and saute for about a minute.Add the ginger and garlic and sauté for another minute.
- Add the rest of the veggies and saute for another two minutes.
- Add the sauce and noodles.Stir to mix evenly.Check the seasonings.Serve hot!
Easy Butternut Squash with Bengali Five Spice (Panch Phoran)
Squash (any variety) is one of the few vegetables I strongly disliked growing up.But its funny how your tastes develop over the years!Many of the foods I didn’t like earlier are now my favorites and I keep finding new ways to cook them :)Although, this preparation is not new.Its the way my mom makes it and you can use any squash instead of Butternut!Since squash is inherently sweet this dish has a sweet taste but the Five Spice used here just balances the sweetness perfectly.
I’ve used the Bengali Five Spice also called Panch Phoran that consists of equal amounts of the following seeds,Cumin,Fennel,Mustard, Fenugreek and Nigella!You can make the combination at home or buy it from your Indian Grocer!Its an aromatic mix of spices that flavor almost any vegetable and all you need is a teaspoon or two.Little bit goes a long way and its used a lot in Bengali kitchens in a lot of preparations!
An easy and flavorful dish ideal for weeknights for an Indian Inspired dinner that’s also vegan and healthy!You will be amazed at how good this is!
Butternut Squash stir fried using Bengali Five Spice (Panch Phoran) for an amazing and easy side dish!
Ingredients
- Buttersquash peeled and cubed-2 cups
- Panch Phoran(Bengali Five Spice)-2 tsp
- Jalapeños (green chilli)-1 chopped
- Oil-2 tbsp
- Salt- to taste
Instructions
- Heat oil in a skillet.
- Once heated add the Panch Phoran followed by jalapeños until it splutters.Immediately add the squash and salt.
- Lower the heat, cover and cook, stirring in between until done (about 10-12 minutes).
- Serve with Rice or Roti.
Tofu and Vegetables Stir Fry
The sauce that I’ve made here is extremely easy with the main ingredient being this Chili Garlic sauce that I picked up at a Korean Store. I’ve made the same recipe with chicken strips for a different variation and it came out delicious.You could use it for any stir fry for that spicy garlicky heat!
It has just the perfect amount of heat and spice and its very similar to the Indo Chinese preparations served in Indian restaurants without any effort literally.It could easily pass off as one of my best Tofu dishes! Ingredients Instructions
