Its ideal for this weather when you feel like having fresh and light meals. It takes no time to cook since we’re using Chicken Breasts. The process is fairly simple and starts off with sautéing the chicken pieces rubbed with a little salt and turmeric until slightly brown. The spices and yoghurt are then added to create a lovely sauce that you can scoop up with roti or rice!

Indian Chicken Koftas

06 | 03 | 2013
By Soni Sinha

Meatballs are the ultimate comfort food! And this week with the temperatures dropping again, they seem like the perfect dish to cook!My Chicken Koftas are Indian Spiced Meatballs with aromatic spices that can make any mealtime special. They’re easy and so flavorful and pair very well with Naan or Pulao or just plain rice!I’ve used ground Chicken here, but you could use any ground meat for this preparation. Its a great dish for entertaining since it can be prepared ahead of time.

chicken kofta

To give a lovely color to the koftas I’ve fried them in a little oil before adding them into the sauce. The addition of coriander adds that freshness and the yoghurt makes them moist! You could skip the frying part and add them straight into the sauce if you wish. The sauce is a tomato based sauce with some cumin and garam masala for those lovely Indian flavors. You just have to let the koftas simmer in the sauce for a few minutes to absorb all the delicious flavors!A great tasting dish for these cold days and nights!

Honey Cumin Boneless Chicken Wings with Greek Yoghurt Dip #CookedInTranslation

23 | 01 | 2013
By Soni Sinha

chicken wings2

With Superbowl in sight, our Cooked in Translation team has chosen the perfect dish to try out this time! The theme of Cooked in Translation is to create your own adaptation of a recipe and that’s what makes this so exciting!!The recipe for today is CHICKEN WINGS chosen by our host Azlin Bloor of LinsFood!I’ve used Chicken Tenders or Goujons here because the hubby doesn’t like Chicken Wings with bones.I’m sure there are many people out there who prefer boneless wings like my husband does and why not, its more meaty and tastes absolutely delicious.

chicken wings1

These make for the perfect little bites to enjoy while watching your favorite game and they couldn’t be easier, since they’re made in a skillet! The sauce is a sweet and spicy combination of honey and Sriracha with some toasted Cumin that gives it so much flavor and the lovely color.Talking about Sriracha, I have to admit I’m addicted to it and add it to everything I cook these days! But wait till you try this recipe, it all comes together on the stovetop and I serve these with a simple Greek Yoghurt Dip spiked with cayenne and cumin! Its hot, its sweet, its just perfect for any game night!

Easy Wonton Soup #SundaySupper

04 | 11 | 2012
By Soni Sinha

This past week, Hurricane Sandy ripped through New York and New Jersey and we were left with no power or heating for four days. There were trees uprooted all across our neighborhood and we were extremely lucky that none fell on our house or on our neighbors’!The help and offers from friends and well wishers to come and stay was really touching and we’re very thankful to all our friends for their hospitality in such times. The amount of destruction is massive and my heart goes out to the families who’ve suffered to the extent that’s unimaginable and I only hope that their lives return back to normal sooner than later.

In order to keep us warm I often made soups for lunch and this easy Wonton soup was just perfect since it didn’t require any effort.I used a pack of Chicken Wontons sold at Trader Joe’s.Just added a few veggies with some stock and we had one tasty soup. You can easily make a vegetarian version of this soup by using vegetable wontons and vegetable stock!

Indian Spiced Chicken Meatballs ~Its Tailgating time!! #SundaySupper

09 | 09 | 2012
By Soni Sinha

chicken meatballs 1

Its tailgating time!!

I learnt about ‘tailgating’ only after we moved to America! For those who do not know what it signifies ‘a tailgate party is a social event held on and around the open tailgate of a vehicle. Tailgating often involves consuming alcoholic beverages and grilling food. Tailgate parties usually occur in the parking lots, stadiums and arenas, before and occasionally after games and concerts.’ {Source-Wikipedia}.Having said that, you don’t really have to be at the game venues to enjoy a tailgating party. You can have it indoors or outdoors, with a group of friends or lounge on your own!Its a great way to enjoy some great foods that are easy to make and eat!Its the start of the football season and my friend Lane from Supper for a Steal  proposed ‘tailgating foods’ for this Sunday Supper!

chicken meatballs

I’m bringing Chicken Meatballs for this event that has just the right flavors with an Indian twist! My meatballs are moist, juicy, perfectly sized to munch-on while watching your favorite team play! These balls are crunchy and rustic looking on the outside but incredibly soft on the inside with the lovely mint and coriander marrying beautifully giving them lots of fresh flavor. The best thing about these are that the food processor does all the work for you so you don’t have to work out a sweat in preparing them 🙂 They’re super easy, delicious and certain to please kids and adults 🙂
