One remarkable woman is on my mind today.A woman who has endured so much pain in the past few months..lost her husband,survived a life threatening health condition and still trying to recover,but yet she smiles in all her pain,yet she speaks of positivity,of happiness,of joy,of love.Yeah that’s my Mom.And I’m so grateful that I’m her child.

My mom makes the best Koftas ever.And today I thought of recreating her favorite recipe using Brussels Sprouts along with some dried sweetened cranberries and I’m elated that it turned out absolutely delicious.A new family favorite indeed!Its a special dish that requires a special occasion for it to be served.

My Brussels Sprouts Kofta is one amazing dish with some exotic flavors and super simple for anyone to try.I recently spotted sliced Brussels Sprouts at Trader Joe’s and couldn’t resist buying one pack.Its a time saver.The koftas have some spices, ginger and dried cranberries and are bound together using some Gram Flour (Besan) easily available at your local Indian Grocers.The combination of the tart, sweet,spicy flavors is insanely good and will convert any Brussels Sprouts hater into a Brussels Sprouts lover.The only thing that you have to be careful about is to not cook the koftas for too long in the sauce.They might collapse.You can add the koftas just before serving and cook for a couple of minutes.They should be perfectly coated in the juices and taste delicious.Enjoy.

Ingredients
  

For the Koftas

  • Brussels Sprouts Shredded/sliced-2-3 cups
  • Gram Flour Besan-1/2 cup
  • Crushed Ginger-1 tsp
  • Dried Sweetened Cranberries-3/4 cup
  • Cashews chopped-1/2 cup
  • Ground Coriander-1 tsp
  • Ground Cumin- 1tsp
  • Salt-1 tsp
  • Oil-to deep fry

For the Sauce

  • Onion Medium-1 finely chopped
  • Crushed Ginger-1 tsp
  • Crushed Garlic-1 tsp
  • Medium Tomatoes-2 pureed
  • Ground Cumin-1 tsp
  • Ground Coriander-2 tsp
  • Garam Masala-1 tsp
  • Turmeric-1 tsp
  • Red chili powder-1 tsp
  • Salt- to taste
  • Sugar-1 tsp
  • water-1 1/2 cups
  • Oil 2-3 tbsp

Instructions
 

Koftas

  • In a microwave safe dish soften the shredded brussels sprouts for about 3-4 minutes.
  • Mix all Kofta Ingredients and roll into small balls.
  • Deep fry the balls in the oil in batches until golden on all sides and keep aside.

Sauce

  • In a deep skillet heat the oil and add onions.
  • Fry for about 4-5 minutes until golden and add the ginger and garlic.
  • Add the tomatoes and spices and cook until oil starts to separate from the sides.
  • Add the water, bring to a boil.Lower the heat and cook for about 8-10 minutes.
  • Adjust the seasonings.Your sauce is ready.
  • When its time to serve, add the balls into the sauce and cook for about 2-3 minutes until the sauce bubbles.Serve hot with Naan, Roti or Rice.

Indian Spiced Chicken Meatball Wraps #Lunchbox #SundaySupper

When it comes to making your own lunch or your kids’ lunches you’re sometimes lost as to what to pack.School starts in a few weeks and I can see myself fretting over what to pack in my Ten year old’s lunchbox. For starters, my daughter does not like sandwiches and I end-up making some kind of pasta dish almost every other day for her lunch.I know that she’s fond of Wraps but then again she doesn’t want cold-cuts inside and that has got me thinking of coming up with something that she would love, like these Indian Spiced Chicken Meatball Wraps that are healthy and packed with flavor to please all those picky eaters (kids and adults)!

My Indian Spiced Chicken Meatballs are baked in the oven, have tons of flavor from the coriander,garam masala, cilantro and mint!Whether you are a cilantro lover or hater you will love this recipe since I’ve used a combination of mint and cilantro that balances the flavor of both the herbs and is used extensively in Indian cooking.The grated onion keeps these meatballs moist and you can make  a big batch of these and freeze them for later use.Use them in soups,curries,even as a tasty appetizer for your next party!The possibilities are endless!

For the wraps I use Whole wheat tortillas and any salad mix.I also make a simple raita using Plain Yoghurt with some salt and ground toasted cumin.You pack each item separately and assemble at lunchtime.Its a great variation from the usual and a fun way to enjoy Indian flavors!I made these for our dinner yesterday and got a big thumbs-up from my both my kids! 🙂

Indian Spiced Chicken Meatball Wraps

Ingredients
  

  • Whole Wheat Tortillas-4
  • Salad mix-2 cups

For the Meatballs

  • Chicken Mince breasts and thighs-1 lb
  • 1 small onion- grated or pureed
  • Crushed Ginger-1/2 tbsp
  • Crushed Garlic-1/2 tbsp
  • Ground Coriander-1 tsp
  • Garam Masala- 1/2 tsp
  • Chopped Fresh Cilantro -1/2 cup
  • Chopped Fresh Mint-1/2 cup
  • Salt-to taste

Raita

  • Plain Yoghurt-2 cups
  • Cumin Seeds-1-2 tsp
  • Salt-to taste

Instructions
 

  • Preheat oven to 375 degrees.
  • In a dry pan, toast the cumin seeds on medium until slightly golden.Allow to cool and crush using a pestle mortar.
  • Mix the Raita ingredients in a bowl and keep in the fridge.
  • Mix all the meatball ingredients in a mixing bowl.
  • Make small balls and place on a greased foil lined baking sheet.
  • Spray with cooking spray all over the top.
  • Bake in a preheated oven for 15-20 mins until slightly golden.

To assemble

  • Take a Tortilla Wrap and place some salad greens in the center.
  • Add 4-5 meatballs and pour some raita all over.
  • Roll and enjoy!

Indian Chicken Koftas

Meatballs are the ultimate comfort food! And this week with the temperatures dropping again, they seem like the perfect dish to cook!My Chicken Koftas are Indian Spiced Meatballs with aromatic spices that can make any mealtime special.They’re easy and so flavorful and pair very well with Naan or Pulao or just plain rice!I’ve used ground Chicken here, but you could use any ground meat for this preparation.Its a great dish for entertaining since it can be prepared ahead of time.

To give a lovely color to the koftas I’ve fried them in a little oil before adding them into the sauce.The addition of coriander adds that freshness and the yoghurt makes them moist!You could skip the frying part and add them straight into the sauce if you wish.The sauce is a tomato based sauce with some cumin and garam masala for those lovely Indian flavors.You just have to let the koftas simmer in the sauce for a few minutes to absorb all the delicious flavors!A great tasting dish for these cold days and nights!

Ingredients
  

For the Koftas

  • Ground Chicken-1 lb
  • Yoghurt-1 tbsp
  • Crushed Ginger-1 tsp
  • Crushed Garlic-1 tsp
  • Garam Masala-1/2 tsp
  • Fresh Coriander-2 tbsp
  • Salt- to taste

For the Sauce

  • Oil-3 tbsp
  • Cinnamon stick-1/2 inch
  • Green Cardamom-3
  • Cloves-3
  • Onions-2 medium finely chopped
  • Tomatoes-3 chopped
  • Crushed Ginger-1 tsp
  • Crushed Garlic-1 tsp
  • Yoghurt-1 tbsp
  • Turmeric-1/2 tsp
  • Ground Cumin-2 tsp
  • Ground Coriander-2 tsp
  • Garam Masala-1 tsp
  • Red chili-paprika-1 tsp
  • Sugar-1 tbsp
  • Salt-to taste
  • Water-2 Cups

Instructions
 

  • Mix all the kofta ingredients and make small balls.
  • Shallow fry if you want a golden color.If not just keep the balls aside to add into the sauce.
  • Heat oil in a deep skillet and the cinnamon,cardamom and cloves.
  • Add the onions and a little salt and saute until golden.Add the ginger,garlic and spices and saute on low for a few minutes.
  • Puree the tomatoes and add them into the onion mixture.Add the salt,yoghurt and continue to cook on medium heat stirring every now and then until oil starts to separate around the edges.
  • Add water and bring it to a boil on high.Check the seasonings.
  • Slowly add the koftas and reduce the heat to medium.
  • Let the koftas simmer in the sauce for about 10-15 minutes.
  • Serve hot!

Its tailgating time!!

I learnt about ‘tailgating’ only after we moved to America!For those who do not know what it signifies ‘a tailgate party is a social event held on and around the open tailgate of a vehicle. Tailgating often involves consuming alcoholic beverages and grilling food. Tailgate parties usually occur in the parking lots, stadiums and arenas, before and occasionally after games and concerts.’ {Source-Wikipedia}.Having said that, you don’t really have to be at the game venues to enjoy a tailgating party.You can have it indoors or outdoors, with a group of friends or lounge on your own!Its a great way to enjoy some great foods that are easy to make and eat!Its the start of the football season and my friend Lane from Supper for a Steal  proposed ‘tailgating foods’ for this Sunday Supper!

I’m bringing Chicken Meatballs for this event that has just the right flavors with an Indian twist!My meatballs are moist, juicy, perfectly sized to munch-on while watching your favorite team play!These balls are crunchy and rustic looking on the outside but incredibly soft on the inside with the lovely mint and coriander marrying beautifully giving them lots of fresh flavor.The best thing about these are that the food processor does all the work for you so you don’t have to work out a sweat in preparing them 🙂 They’re super easy, delicious and certain to please kids and adults 🙂

Indian Spiced Chicken Meatballs

Ingredients
  

  • Chicken Thigh/breast mince-1 lb
  • Small Onion-1
  • Yoghurt-1 tbsp
  • Crushed Ginger-2 tsp
  • Crushed Garlic-2 tsp
  • Green Chillies jalapenos-2 chopped
  • Fresh Coriander -1/2 cup chopped
  • Mint -1/2 cup chopped
  • Plain bread crumbs-3 tbsp
  • Coarse Ground Semolina-2 cups
  • Salt-to taste
  • Oil-2 cups for frying

Instructions
 

  • In a food processor mix all the ingredients except semolina and oil.Make round balls and roll them in the Semolina.Deep fry in batches until nice and golden.Serve hot with Tomato ketchup!
