Paneer Tikka Potato Poutine Bites

Paneer Tikka Potato Poutine Bites

You know that I love potatoes!My recipes using potatoes are far too many to share here but I particularly loved using Idaho® potatoes in my Indian Spiced Potato Pastry Shells and they’re always popular with our guests. Idaho® potatoes’ Russet Potatoes are my favorite and I use them in most of my potato recipes.Idaho® potatoes have a unique taste and texture due to ample mountain-fed irrigation and rich Volcanic soil. Look for the “Grown In Idaho” seal to get top quality Idaho® potatoes in  your grocery stores.

Spicy Roasted Potatoes

I loved this Poutine Challenge thrown at us by Idaho® potatoes and decided to give my own Indian-Inspired spin on Poutine. Poutine is classic French Canadian dish of fries, cheese curds and gravy that I first tasted in Montreal.It was to die for! It has now gone global with chefs creating their own versions in different parts of the world! For today’s recipe I’ve come up with a savory spicy paneer tikka served over some garlicky roasted Potatoes that have been sliced and coated in warm aromatic spices like cumin and garam masala. I’ve made an Indian masala sauce to drizzle over these beauties and I have to tell you that they’re absolutely phenomenal!

Paneer is an Indian cheese that’s easily available these days at your local grocers or if you’re lucky to have Indian grocers nearby. You can also make it at home following this recipe. The paneer is cubed and marinated in yoghurt and some spices for a few hours to soak the deliciousness and then grilled until nice and golden. The potatoes are coated in a spice mix and roasted in a preheated oven and deliciously crispy. Indian masala sauce consisting of onions, tomato, spices and cream is drizzled over the assembled poutine bites and the robust flavors tease your palate like none other. The contrasting flavors from the smoky paneer tikka on top of the crispy spicy potatoes smothered in a slightly sweet and rich creamy sauce is pure joy! Enjoy!

Ingredients
  

Paneer Tikka

  • Paneer-8-10 oz
  • Greek yoghurt or thick plain yoghurt-1/2 cup
  • Crushed ginger and garlic-1 tbsp
  • Tandoori masala-2 tbsp
  • Salt to taste
  • Oi

Crispy Spiced Roast Potatoes

  • 3 large Idaho® Russet Potatoes- washed and sliced into 1/4 inch thick rounds
  • Garlic powder-1 tsp
  • Ground Cumin-1 tsp
  • Garam Masala-1 tsp
  • Paprika-1 tsp
  • Salt
  • Oil

Masala sauce:

  • Finely chopped onions-1/2 cup
  • Crushed Ginger-1/2 tsp.
  • Crushed Garlic-1/2 tsp.
  • Garam masala- 1 tsp.
  • Tomato puree-1 cup
  • Sugar-1 tsp.
  • Water-1 cup
  • Cream- 1/4 cup
  • Salt to taste
  • Butter or oil-3 tbsp

Instructions
 

Paneer Tikka

  • Mix all the ingredients and let it marinate for about 3-4 hrs. In a foil lined greased baking sheet arrange the paneer cubes and broil on low for about 10-12 minutes turning them over midway until slightly golden. Cut them into small pieces when cool enough to touch.

Crispy Spiced Potato

  • Preheat the oven to 450 degrees. In a greased roasting tray mix the potatoes with spices and oil and spread evenly. Bake for 30 mins until slightly golden and crispy.

Masala Sauce

  • In a pan heat butter or oil and add the onions and sauté until golden. Add the ginger and garlic and fry for about a minute.
  • Add the spices and mix well. Add the tomato puree and sugar.
  • Stir and continue to cook on low heat for about 6-7 minutes.
  • Add water, bring to a boil and reduce the heat. Let it simmer for a about 5 minutes.Blend into a smooth paste.Pour the mixture into the same pan.
  • Add the cream. Turn off the heat. Mix well and check the seasonings.

To serve

  • Arrange the potato in a serving tray. Top with the paneer tikka pieces and drizzle the sauce all over.Enjoy!

Happy New Year!!!As we start the new year with new resolutions and promises I hope that you’re able to achieve all that you’ve set out for this year!I personally don’t keep new year resolutions but after all the partying for the past few weeks and gobbling up copious amounts of food, its always a good idea to start the year with light and healthy meals.The recipe I have for your today is perfect for your busy weeknights and flavored with Indian spices and served alongside a simple salad.

We love Salmon and I’m constantly experimenting with different ways to cook it.This recipe came about as a result of being time-constrained (aren’t we all!) and in-between kids’ activities and we loved it!The Salmon is perfectly coated in all those delicious spices and it comes on the table in no time!I’ve served this as an appetizer too using cubed fish instead of the long fillets.Its always a hit with my guests and super simple to make.Enjoy!

Ingredients
  

  • Salmon fillets-5
  • Canned Crushed tomato or tomato puree-3/4 cup
  • Crushed Ginger-1 tsp
  • Crushed Garlic-1 tsp
  • Ground Cumin-1 tsp
  • Ground Coriander -1 tsp
  • Garam masala- 1 tsp
  • Turmeric-1 tsp
  • Paprika-1 tsp
  • Oil-3 tbsp
  • Salt

Instructions
 

  • Preheat the oven to 470 degrees
  • In an ovenproof dish mix all the ingredients except the Salmon.
  • Add Salmon and mix well.
  • Drizzle some oil all over and bake for 15-20 minutes.(Keep an eye to make sure to not burn the fish)
  • Once done,place under the broiler for 1-2 minutes just until the edges turn slightly golden.
  • Serve with your favorite salad.

Holidays are the time to indulge in delectable desserts like the one I have for you today.

If you’re looking for an easy dessert that would undoubtedly be the star of the evening, then this one is for you.

If you’re looking for last minute dessert ideas, then this for is for you.

If you’re looking for a dessert that can be made a day ahead so as to save you time and effort on the day itself, then this one is for you.

If you love cake and custard and cream, then this one is for you.

If you’re looking for a kid pleasing dessert, then this one is for you.

Individual Strawberry Trifle

Trifle is my all time favorite dessert and I love making it during the holidays.The layers of cake,custard and cream is magical and the rave reviews you get for a dessert as easy as this makes it all the more worthwhile.I love strawberries in my trifle but you could use any fruit that works for you.I’ve made these in individual portions but you could use a big trifle dish too.I just find the individual portions cute during the holidays.

You could make the cake from scratch but I’ve used a regular store-bought pound cake and pudding mix.Makes the process even quicker.The beauty of layered desserts is that you can involve your kids and its a fun way to get them into the kitchen during the holidays!My kids layered this one for me 🙂 This is one dessert that’s going to disappear quickly so be sure to make some extra servings.

Ingredients
  

  • 1 package vanilla instant pudding
  • 1 package pound cake cut into cubes
  • 1 package fresh strawberries halved
  • 1 container frozen whipped topping thawed

Instructions
 

  • Prepare pudding according to directions on package.
  • Let pudding stand a few minutes to set.
  • In your mini dishes, layer some of the cake pieces,top with some strawberries,then some the pudding,more strawberries,some of the whipped topping and repeat.
  • Repeat layers with the remaining ingredients.
  • Cover and store in the the refrigerator for at least 2 hours before serving.

Aren’t holidays just that? Good times spent together with those we love. These past couple of months have been rather busy with the start of the holiday season and that means lots of gatherings. And it continues until the end of the year and we can’t seem to get enough of all the fun we’re having. Our Christmas tree is all decked up and I’m looking forward to some quality family time over the kids’ winter break.

Lamb seekh Kebabs

I’m sure many of you would be traveling to be your family for the holidays. Last December we traveled to the UK to spend Christmas with family but this time round we’ll be meeting our cousins here in America and when we all get together it’s some serious fun. I’m looking forward to all the laughter, our singing sessions and lots of wine! And when it comes to wine there’s one brand that shares a similar philosophy of family values and has consistently been a favorite. I’ve enjoyed Gallo Family Vineyards’ wines for years and they were kind enough to send me their gorgeous Merlot and Red Moscato for this event. While I’m looking forward to grilling some lamb chops( with some rosemary, olive oil, salt and pepper) to enjoy with the Merlot, the recipe I have for you today pairs really well with the Red Moscato. Lamb Seekh Kebabs 5

If you know me, you know that I love spicy foods and kebabs are my all time favorites. They’re imperative to my holiday appetizer menu and my guests love them. Like these Lemon Chicken Kebabs or my succulent Chicken Shami Kebabs. I can’t seem to get enough of kebabs and find them irresistible. They’re also super easy to make and appeal to every palate with their robust flavor. The Indian Subcontinent is blessed with multifarious kebab delicacies and each one has its own unique flavor pattern.

My Lamb Seekh Kebabs are infused with ginger, garlic, some spices, cilantro and taste amazing. Once the mixture comes together, they’re rolled along a wooden or metal skewer and can be grilled over a bbq, in a tandoor (clay oven), in the oven, or even pan-fried until all golden and delicious. They make for an amazing appetizer or even an entrée dish if served with a pita bread and can be prepared a day in advance. Just assemble the mixture and wrap around the skewers. Grill them just before your guests arrive. The kebabs are insanely delicious and will leave your guests wanting more.

Gallo Family Red Moscato

Gallo Family Red Moscato would be the perfect accompaniment to these kebabs. This vibrant medium bodied wine balances the spices in the kebabs with its sweet citrus and peach flavors with a bright red berry finish. It’s fresh, perfectly light and best served chilled. It pairs best with light cheeses, spicy foods and desserts. One of my favorites during the Holidays!

Ingredients
  

  • 1 lb ground lamb
  • 2 tsp minced ginger
  • 2 tsp minced garlic
  • Finely chopped small onion
  • ½ cup chopped cilantro
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp garam masala
  • 2 chopped green chilies optional
  • salt to taste
  • Oil for basting
  • Ice cold water

Instructions
 

  • In a mixing bowl mix the massage the ground lamb with your hands for a few minutes.
  • In a food processor place the onion and chilies and pulse.Add all the ingredients into the lamb and mix well.
  • Take chilled water in a bowl,wet your hands. Take a small mixture and roll on the skewers for an elongated shape. Repeat with the rest.
  • In a foiled lined baking sheet arrange the skewers and bast with oil.
  • Grill on medium for about 10 minutes before rotating the skewers for another 5-10 mins until all golden.
  • Serve with lemon wedges and thinly sliced onion rounds.

Easy Cream Cheese Pumpkin Pie

Holiday menu planning can be an arduous process with all the shopping, prepping and finally executing. As I mentioned in my previous post, try and keep things simple yet flavorful. The idea is to have all the prep work done so that on the day, you get to enjoy quality time with family and friends. I like to make my desserts a day in advance so that they get enough time to set/chill in the fridge. And talking of desserts and Pumpkin being the flavor of the season, I’m sure there’ll be a lot of Pumpkin pies served during Thanksgiving dinner all across America.

As much as I love Pumpkin Pecan pies, I don’t make them since my 7 yr. old is allergic to pecans. I make my Easy Cream Cheese Pumpkin Pie instead that I’ve adapted from this recipe and my kids adore it. It’s scrumptious with all that pumpkin goodness and screams Thanksgiving. The flavors are spot on with a slight hint of the pumpkin spice in the background.Its rich and creamy and perfectly sweet.If you’re a pumpkin dessert lover like me, then this dessert will satiate your dessert cravings like none other.

I made the Pie Crust using this recipe and it turned out perfect. The crust can be made ahead and stored up to 2 days in the fridge. The filling is quick and easy with cream cheese, pumpkin, eggs, and spices.Top it with some whipped cream and you have one stunning dessert as easy as a Pie! Literally.

Ingredients
  

For the crust

  • 1 ¼ cups all-purpose flour
  • ¼ teaspoon fine sea salt
  • 10 tablespoons unsalted butter cold and cut into cubes
  • 2 to 4 tablespoons ice water

Filling

  • 2 packages one 8 ounces, one 3 ounces cream cheese, softened
  • 1 cup sugar
  • 1 can 15 ounces solid-pack pumpkin
  • 3 tablespoons all-purpose flour
  • 1 tsp Pumpkin Pie spice
  • 3 eggs lightly beaten

Instructions
 

Crust

  • In a food processor place the flour and salt and pulse.Add the butter and pulse until you see lumps form.
  • Add water a little at a time until the dough just comes together.
  • Flour your surface and gather the dough together into a ball.Cover with plastic wrap and store in the fridge.
  • When ready to bake,preheat the oven to 375 degrees.
  • Roll out the dough into a large round (approx. 13 inch for a 9 inch pie dish).
  • Once rolled carefully place the rolled out dough onto the dish using your fingers spread out evenly all over.Prick all over with a fork.
  • Cover the crust with a parchment paper and fill it with dried beans all the way till the top.
  • Bake the crust in the oven for 20-25 minutes until slightly brown.
  • Transfer onto a wire rack.

Filling

  • In a large bowl beat the cream cheese and sugar until creamy.
  • Add the pumpkin,flour,pumpkin pie spice and mix again.
  • Add the eggs and blend the mixture until all smooth.

To bake the Pie

  • Pour the pumpkin mixture into the baked pie crust and bake at 350 degrees for 40-45 minutes until the filling is just set and the edges are golden.
  • Cool on a wire rack and allow to chill in the fridge for at a least 5-6 hours before serving.
