Crepes with Strawberry Mascarpone Cream #SundaySupper #Healthy

03 | 03 | 2013
By Soni Sinha

If you ever stepped into my kitchen on a weekend, you’d find me making these gorgeous Crepes for breakfast for my kids! Its their most favorite breakfast of all time and they really look forward to it on the weekends. And why not!Nothing says it better than a soft delicate Crepe filled with a luscious creamy filling and vibrant Red Strawberries peeking out from the edges!

crepes2

Crepes are easily available in stores everywhere, but why would you buy something that’s so easy to make at home and I personally prefer the home-made texture better than store bought ones!I just whisk all the ingredients and let it sit in the fridge for a few minutes before the process begins.Growing up I never had a Crepe but instantly fell in love with it in this quaint little French restaurant in London.Since then I’ve been making Crepes, but mostly with a savory Mushroom filling! But that’s for another time 🙂 I started making the sweet fillings after my kids were born, and they’ve always enjoyed it with a LOT of drizzle of Chocolate Sauce 🙂

strawberry mascarpone crepe

My filling here is a healthy mix of the creamy Mascarpone and Greek Yoghurt whisked together with some Honey! You can add any fruits of your choice and it tastes absolutely delicious! The perfect breakfast or dessert for any day or night 🙂

Mango and Strawberry Cream

04 | 08 | 2012
By Soni Sinha

Summer months are my favorite since I get to enjoy my favorite fruit, Mango!Yes, I love mangoes and cannot have enough of them all summer long.I use them in my smoothies, salads, salsa, pies and of course the dessert I have for you today. It’s simple with pure flavors just the way I like my desserts in the summer.

Mango and Strawberry Cream
Its just my take on the good old Fruit Cream that I’ve enjoyed since childhood when Mom used heavy cream every time.Although it tasted delicious, I cannot imagine eating it for my dessert today due to the high fat content and the calories in there. But,I’ve made a healthier version of this family classic using mascarpone and greek yoghurt and it tastes delicious.

fruit cream (strw and mango1)

It can be whipped-up in no time and you can use any fruit on hand. Its an easy chilled dessert that can be made ahead especially when you’re entertaining and also looks super cute.Garnish with a little mint for the finishing touch.Who says healthy cannot be delicious!Enjoy.

Strawberry Ricotta Yoghurt Mousse ~Blue Ribbon Challenge

20 | 06 | 2012
By Soni Sinha

I’m just loving the days with the kids at home and the fact that I don’t have to wake them up, get them ready, deal with the crankiness of my 4 year old while making breakfast for my 8 year old. All the chaos that’s part of a school day is now gone replaced by calm serene mornings, where I can enjoy an extra cup of tea and relax! Summer how I love you J

I’m also enjoying the various blog events that I’m a part of beginning with Blue Ribbon Challenge initiated by Anna of Crunchy Creamy Sweet!!A challenge where all of us make the same dish with our own twists and vote for our favorite. This event will be followed by another exciting one on Sunday! Will keep you posted on that too J

The fact that its healthy makes it even more enjoyable J
