Tofu and Peas Curry

Meatless meals give you the opportunity to appreciate veggies and its a good idea to go meat-free a few times during the week.If you like Indian food then there are myriad of vegetarian recipes that you can cook for each mealtime.Our Sunday Supper team has decided to go meatless today and I’m so excited!

Tofu and Peas Curry(Tofu Matar)

My contribution to this event is my Tofu and Peas curry that tastes delicious with all the flavorful spices and it’s also healthy.This dish is traditionally made using Paneer, but Tofu is packed with protein and low in saturated fat that makes it a perfect alternative to Paneer.I shallow fry the Tofu until pale golden and that gives it a lovely texture and helps it hold its shape.

The Tofu takes on all the deliciousness and gets coated in the sauce along with the peas that add a lovely vibrant color to the dish.Scoop it with Roti,Naan or just plain rice.If you love curry then this recipe can be the base for many of your dishes.Substitute the Tofu for your favorite vegetable and enjoy a curry night in the comfort of your own home.

Ingredients
  

  • Extra Firm Tofu-15 oz
  • Frozen Peas-1 cup
  • 1 medium Red Onion-diced
  • Garlic cloves-4
  • Ginger-1 inch
  • Bay Leaf-1
  • Ground Cumin-1 tsp
  • Ground Coriander-1 tsp
  • Red chili powder-1/2 tsp
  • Turmeric-1/2 tsp
  • Tomato-1 pureed
  • Water-1/2 cup
  • Garam Masala-1/2 tsp
  • Salt-to taste
  • Oil-4-5 tbsp

Instructions
 

  • Squeeze the Tofu between your palms gently to get excess water out and pat dry with a kitchen towel.
  • Cube the Tofu into small cubes.
  • In a wok heat about 2 tbsp of oil and shallow fry in batches until golden.
  • Empty onto a plate.
  • In a food processor place the onion,garlic and ginger.Add a little water and make a paste.
  • In the same wok heat about 3-4 tbsp of oil and add the bay leaf.
  • Add the onion paste and saute until the raw smell disappears stirring frequently making sure that it does not stick to the pan.(about 5-6 minutes)
  • Add the spices and continue to cook until aromatic.
  • Add the pureed tomato and continue to cook until you see oil separating from the sides.
  • Add the fried Tofu,mix well and add water.
  • Add salt and garam masala.Check and adjust the seasonings.
  • Add the peas and continue to simmer uncovered for about 6-8 minutes.
  • Serve hot with Roti,Naan or Rice.

Top 10 Recipes of 2013

Its the start of the New Year and I’m so glad 2013 has ended.It will forever be the most difficult year of my life, having lost my Dad .I still cannot believe that he’s gone and I yearn to hear his voice, his phone calls, his messages and struggle with it everyday.

To add to the pain,my Mom had a health scare just two days before the year ended.Thankfully she’s stable now and recovering.The last few months have been extremely hard for me and made me see life in a totally different way.Events like these make you appreciate the value of life and teach you to enjoy every moment with your near and dear ones because you don’t know what the next moment has in store for you.

While 2013 was extremely difficult for me personally, it was a great year for my blog in terms of growth and I also got to work with some well known brands like Campbells, Bertolli and Gourmet Garden to name a few.I look forward to working with these brands again and add many more to the list in 2014.

In-spite of so much turbulence going on in my life, YOU my dear readers were always here reading my stories and encouraging me with your kind words.Every time you visit my site,comment,read a recipe, you motivate me to keep cooking and sharing my recipes with you.It has helped me immensely and kept me going throughout and I have to thank each and every one of you.

Easy Saag Paneer

Today I’ve got for you a dish that’s extremely popular all across the globe.A North Indian delicacy,its hard not to love the rich, thick creamy spinach with succulent almost melting Paneer chunks ready to be scooped with an Indian Flatbread!The fresh vibrant color just brightens up any plate and can make anybody hungry!Its a weekly staple in our house since my kids adore this dish so much!

The flavors in Saag Paneer are mild compared to other curries and its a great way to get some Iron and Protein into your diet.You can use fresh or frozen spinach for this dish.I typically pick up fresh Baby Spinach from the salad section in grocery stores that’s pre-washed.Saves time and effort!

The process starts with boiling the Spinach in hot water to just wilt it and then puree it.Once you have the pureed mixture you prepare the sauce that consists of onions, tomato puree and some spices.The pureed spinach and the Paneer is then added into the sauce and simmered.You can use some sour creme or heavy cream to finish off the dish if you like.

You don’t have to visit an Indian Restaurant to enjoy ‘Saag Paneer’.Enjoy it in the comfort of your own home 🙂 Delicious flavors and gorgeous color this is one amazing dish from the land of the exotic!

Ingredients
  

  • Fresh Spinach-2 Packets 6oz each
  • Paneer- 250 gms
  • Cumin Seeds-1 tsp
  • 2 medium Onions-chopped fine
  • Crushed Ginger- 2 tsp
  • Crushed Garlic-2 tsp
  • Tomato - 2
  • Ground Coriander-2 tsp
  • Ground Cumin- 1 tsp
  • Garam Masala-1/2 tsp
  • Red chili powder-1/2 tsp
  • Sour creme or heavy cream-1 tbsp
  • Oil-3 tbsp
  • Salt- to taste

Instructions
 

  • Boil the spinach for two minutes in a cup of water.Once its cool, puree until all smooth.
  • Puree the tomatoes.
  • Cube the paneer and keep aside.
  • Heat oil in a deep skillet and add the cumin seeds.
  • Once it splutters add onions and saute until slightly golden.
  • Add ginger and garlic and saute until raw smell disappears.
  • Add the tomato puree and spices,salt and cook on medium heat for about 5-6 minutes.
  • Add the pureed spinach and paneer and let it simmer on medium heat until paneer is soft.Add a little water if its too thick.
  • Add the sour creme or heavy cream.Turn off the heat.
  • Serve hot with Roti or Naan!

Easy Paneer Tikka Masala

There’s something about the Tikka Masala that just makes it such an addictive dish.The lovely vibrant colored sauce with bits of marinated chicken or paneer is just pure heaven!Its the most popular dish ordered in Indian restaurants.Its a little different from the Butter Chicken back home, a bit spicier, more tomato-y and so delicious. Chicken Tikka Masala as we all know is a ‘British National Dish’ and considering how popular the ‘curry’ is in the UK, its not surprising at all!

I’ve made this amazing dish using Paneer here since its a huge favorite in my family.My Paneer Tikka Masala is super easy to make and one of my staple dishes when I have guests over.Its always a hit and the recipe couldn’t be easier.The Paneer is marinated in a yoghurt mixture and broiled until golden.The sauce consists of tomato puree along with spices like Garam masala that give it its unique flavor.

The paneer is then added into the sauce to soak up all the lovely flavors and a dash of cream is all it needs.Serve it with Naan or Rice.Enjoy!

Easy Paneer Tikka Masala

Ingredients
  

For Paneer Tikka Marinade

  • Paneer- 400 gms cut into bite sized pieces
  • Hung Yoghurt or Greek Yoghurt-2 cups
  • Lemon Juice-1 tbsp
  • Crushed Ginger-1 tsp
  • Crushed Garlic-1 tsp
  • Garam Masala-1 tsp
  • Turmeric-1/2 tsp
  • Red chili/paprika-1 tsp
  • Salt-to taste

For the Sauce

  • Canned tomato puree-3 cups
  • Crushed Ginger-2 tsp
  • Crushed Garlic-2 tsp
  • Ground Cumin-1 tsp
  • Ground Coriander-1 tsp
  • Garam Masala-1 tsp
  • Turmeric-1/2 tsp
  • Sugar-1 tbsp
  • Water-1/2 cup
  • Light Cream-1/3 cup
  • Kasoori methi dried fenugreek-1 tbsp
  • Butter-1 tbsp
  • Oil-1 tbsp
  • Salt-to taste

Instructions
 

  • In a ziplock bag marinade the paneer along with all the ingredients and let it sit in the fridge for 2 hrs.
  • Place the marinated paneer onto a foil lined greased baking sheet and broil until golden.Keep aside.
  • In a pan heat the butter and oil and add the ginger and garlic.
  • Saute for 1-2 minutes until the raw smell disappears.
  • Add the tomato puree and all the spices, salt and sugar.Cook on medium for about 4-5 minutes.
  • Add the water and continue to cook for about a minute.
  • Add the cream and kasoori methi.Check the seasonings.
  • Add the broiled paneer into the sauce and simmer for about 8-10 minutes until well incorporated.
  • Enjoy with Naan or Rice!

Tandoori Paneer Tikka

Paneer is a fresh cheese commonly used in Indian cooking.Its a good source of protein for vegetarians.Its such a versatile product that can be used in a thousand ways, sweet and savory.This dish is a very popular North Indian appetizer that you will find in most Indian restaurants.I love this dish for its simplicity, flavor and its appearance.

Paneer is easily available at your Indian Grocer’s.It can also be made at home by heating a Gallon of Whole milk and when it comes to boiling point just add 2 tbsp of vinegar or 4 tbsp of lemon juice to curdle it.Collect the curds in a cheesecloth and squeeze it.Tie at the top and leave it hanging so that all the whey has strained out.You can then set the curd in a rectangular shaped dish in the refrigerator and once it has set, cut it into pieces and use it to make all kinds of preparations.If you’re not prepared to do all the effort,you can just get store bought paneer from your Indian Grocer or even Whole Foods!

The key to making good Tandoori Paneer Tikka is to marinade it for about 4-5 hrs at the least, so that the flavors penetrate.You will also need to soak some skewers in water for about 30 minutes (if using wooden skewers) before putting them in the grill.Its a great make-ahead appetizer for parties, gatherings and potlucks. Marinade it the day before and grill it just before the guests arrive!!

Ingredients
  

  • Paneer 300 gms- cubed 2" I use store bought
  • 1 medium Green Bell Pepper Capsicum-cut in squares
  • Thick Yoghurt-2 cups
  • Ginger Garlic Paste-1 tbsp
  • Tandoori Masala-2 tbsp available in most stores
  • Lemon juice-2 tbsp
  • Chaat Masala readily available in Indian Stores-2 tbsp
  • Oil-2 tbsp

Instructions
 

  • In a zip lock bag put all the ingredients except chaat masala and tightly seal it.Mix the contents well together and leave it in the refrigerator for 4-5 hrs or overnight to marinade.
  • Place the marinaded Paneer and Bell Peppers into skewers on an aluminium foil on a baking sheet and broil(grill) on high heat for about 8-10 mins turning once until its all golden around the edges, but not overcooked.Sprinkle some chaat masala over the top.
  • Arrange the Paneer with or without skewers in a serving tray with salad and lemon wedges.Serve hot with Coriander Chutney!
