Chicken Asparagus Pasta with Sour Cream Sauce

Busy weeknights call for easy recipes that are ready in minutes and also appeal to the hungry stomachs after a long day. In our house Wednesdays are Pasta days since my kids love pasta.This recipe I have for you is one of the most adored by my kids and they go for seconds.A pasta dish with chunks of tender flavorful chicken and asparagus coated in the creamy sour cream sauce is my idea of a perfectly delicious and satisfying weeknight dinner.You could easily make this a vegetarian meal by omitting the chicken and adding mushrooms instead.Chicken Asparagus PastaThe dish takes just a few minutes and yet turns out amazing. It’s filling, healthy and nutritious with the addition of asparagus that works beautifully. I’ve used chicken tenders and sautéed them with a little salt, pepper and paprika but you could also use rotisserie chicken instead. The sour cream adds a rich creamy consistency and the freshly grated Parmesan completes the dish.Enjoy!

Chicken Asparagus Pasta with Sour Cream Sauce

Ingredients
  

For the chicken

  • 1 lb chicken tenders
  • salt pepper and paprika
  • Olive oil- 1 tbsp

Sour Cream Sauce

  • Any pasta of your choice-1 lb
  • 1 large Onion-chopped
  • 2 cloves of garlic crushed
  • 2 cups Asparagus-chopped
  • Cooked chicken-1 lb
  • Chicken broth-1/2 cup
  • Sour Cream-1 cup
  • Freshly grated parmesan cheese.

Instructions
 

  • Cook the pasta according to the instructions.
  • In a deep skillet sauté the chicken with some salt, pepper and paprika.Cook until done.
  • In another pan heat some olive oil and butter and add the onions.
  • Sauté for about a minute or two until translucent and add the garlic.
  • Add the chopped asparagus and cook for a minute or two and add the cooked chicken pieces.
  • Add the broth and sour cream and mix well.Check the seasonings.
  • Add the boiled pasta and mix well.
  • Top with some freshly grated parmesan cheese.Serve hot.

Kadai Chicken

The recent snow storm here in New Jersey has brought about a renewed energy to cook comfort foods!I’m in my kitchen even more now than ever, since the cravings don’t seem to stop anytime soon !:) I tend to go rustic with my food preparations during this weather.The recipe I have for you is exactly that.An easy rustic dish that can be cooked and served in a karahi or kadhai.

Kadai Chicken

I’ve been making Karahi Chicken since discovering it in a recipe booklet when I was in college.I’d come home during the holidays and went through this cooking phase when I was trying out different recipes every-day much to the delight of my parents :).The term Karahi means a ‘wok’ and is used in the Indian subcontinent to make various dishes. Karahi dishes originated in Afghan and Persia and have been a favorite in North Indian households and today there are varieties of both non-vegetarian and vegetarian versions of this dish.

Karahi Chicken

Karahi Chicken uses freshly pounded coriander and cumin seeds that give out a distinctive aroma and flavor to the dish.I’ve used Chicken Drumsticks but you can also use boneless chicken pieces.The earthy spices in the chicken when simmered along with the onions and tomatoes creates a thick sauce that soaks the delicious flavors and is best served with Parathas or Chapatis/Roti.Pure comfort food for this weather.Enjoy!

Karahi Chicken

Ingredients
  

  • Chicken Drumsticks-1 lb
  • One large onion peeled and sliced
  • 2 tsp crushed ginger
  • 2 tsp crushed garlic
  • 2 tomatoes pureed
  • Tomato paste-1 tsp
  • Turmeric-1/2 tsp
  • red chili powder or paprika-1/2 tsp
  • ½ cup water
  • Salt to taste
  • Oil-4 tbsp

Karahi Masala

  • 3 tsp coriander seeds
  • 3 tsp cumin seeds
  • 6 black peppercorns
  • 2 red chilies

Instructions
 

  • Dry roast the karahi masala spices in a pan for about a minute or two until fragrant.Grind to a coarse powder in a food processor.Keep aside.
  • Heat a karahi or wok, add oil.Once heated add the sliced onions. Saute until slightly golden.
  • Add the ginger and garlic and saute for abt a minute.
  • Add tomato paste,turmeric,red chili powder and half of the karahi spice and mix well on medium low heat.
  • Add the pureed tomatoes and let the paste cook well and oil separates from the sides.
  • Add the chicken followed by the rest of the spice powder.Add water and salt.
  • Mix well,bring to a boil, cover and cook on medium until the chicken is fully cooked.
  • Serve hot with paratha or roti.

Summer is the time to be outdoors!Glorious days with gleaming sunshine, the perfect excuse to go for a hike, a trip to the beach or a picnic.Add some good food and wine to the mix and its a party!Talking of picnics and July being the ‘National picnic month’ we’re partnering with Gallo Family Vineyards in pairing some delectable picnic recipes with their amazing selection of wines that also come in mini bottles!

Thai Spiced Chicken Meatballs with Peanut Sauce

I adore picnics. Especially in this day and age when digital screens have sabotaged our lives, it’s a great way to enjoy outdoors and appreciate nature in all its glory. We’re blessed to have some lovely picnic areas in our vicinity. Our favorite though is our community park that has a beautiful picnic area overlooking the lake with ample amount of picnic tables and bbq pits. Kids look forward to playing their favorite games while packing their favorite sports equipment and I’m totally focused on the food to pack. We’re big on flavor and spice over here and I love a nice mix of vegetarian/meat appetizers along with cold salads, sandwiches, fruits, dessert and drinks for our picnic. We typically go as a group with our friends and divide the menu. Nothing like a beautiful day spent in the sun sipping your favorite drink, enjoying the food, fun, games and laughter with friends.

When it comes to the drinks menu, wine ranks high on my list!I’ve enjoyed Gallo Family Vineyards’ Cabernet Sauvignon and Pinot Grigio for years but when they sent me these cute little mini bottles of Pink Moscato I was thrilled!How convenient!Its the perfect little size to carry to any outdoor event and I’m sure the wine lovers are with me on this one!I had an option to choose from their selection of Cabernet Sauvignon, Chardonnay, Merlot, Moscato, Pinot Grigio, Pink Moscato, Pinot Noir, Red Moscato or White Zinfandel and I chose the fruity Pink Moscato since it pairs well with Spicy food.

Peanut/Satay Sauce

Thai food is in high demand in my family and it’s served on our table almost every week.Like these Thai Chicken Lettuce Wraps or my Thai Red Curry Chicken!For our event I decided to make these amazing Thai Spiced Chicken Meatballs that my kids love with a luscious Peanut Sauce!The meatballs have the earthy flavors from the lemongrass, galangal and spices like cumin and coriander in the red curry paste.My kids even help me shape the meatballs.So much fun!The meatballs taste delicious and its always a great way to get kids to enjoy different flavors.The smooth peanut sauce rich with peanut butter and coconut milk has a subtle hint of the spices from the red curry paste and just the right amount of sweetness .The meatballs dunked in the sauce is a harmonious blend of flavors in your mouth with the spicy, sweet and sour all coming together.

Ingredients
  

For the meatballs

  • Ground Chicken-1 lb
  • 1 ½ tbsp red curry paste
  • Cilantro-2-3 tbsp chopped
  • Bread Crumbs-1/2 cup
  • Salt-to taste
  • Oil

Peanut sauce

  • 1 can unsweetened coconut milk
  • 1-2 tbsp red curry paste
  • ¾ cup peanut butter
  • ½ cup of sugar
  • salt to taste
  • ¼ cup water

Instructions
 

  • Preheat the oven to 400 degrees.
  • In a mixing bowl mix the meatball ingredients and form into round balls.
  • Place the meatballs on a foil lined baking sheet and bake for 15 minutes or until all cooked and slightly golden.

Peanut sauce

  • In a pot place all the ingredients and bring to a gentle boil whisking continuously.Let it simmer for 3-5 minutes.Allow to cool before emptying in a jar or a box.

Chilled Asparagus and Coriander Soup

Warm weather has finally graced us and it’s pure joy to step out these days to soak in the glory.Its also the time of the year when cooling foods and drinks are in order and the recipe I have for you today will do just that.A light refreshing Chilled Asparagus Soup might just be the perfect lunch with your Mom and cheer her up on Mother’s Day!

And yes, I said Chilled Asparagus Soup.For those of you who haven’t tried a chilled soup before let me tell you it tastes delicious!Smooth, rich and creamy,it cools you off while hydrating you at the same time.Give it a try.

Asparagus is one of my favorite vegetables and I just can’t seem to get enough of it during Spring. The soup comes together in minutes and I’ve flavored it with some ground coriander.I love adding ground coriander in my soups as you can see in my Carrot and Coriander and Cauliflower and Spinach Soups.I love the complex earthy undertone.I’ve used Chicken Broth but you could also use water or vegetable broth.Once slightly cooled puree in a blender and serve it with a dollop of sour cream and your favorite bread!Enjoy.

Ingredients
  

  • Asparagus-1 lb
  • Onion-1 large chopped
  • All purpose flour-1 tbsp
  • Ground Coriander-1 tbsp
  • Chicken or Vegetable Broth-4 cups
  • Extra Virgin Olive Oil-2 tbsp
  • Salt and pepper
  • Sour Cream

Instructions
 

  • Trim the asparagus and cut into 2" pieces.
  • In a large pot heat the olive oil and add the chopped onions and saute until translucent.
  • Add the flour and mix.
  • Add the asparagus and saute for about 2-3 minutes.
  • Add the ground coriander ,salt and pepper.Stir for a few minutes.
  • Add the broth and bring to a boil.
  • Reduce the heat, cover and let it all cook for about 20-25 minutes.
  • Once slightly cooled puree the soup in a blender.
  • Chill in the fridge for at least 3 hours or even overnight.
  • Serve chilled with a dollop of sour cream and your favorite bread.
